These are the basic steps for making chocolate dipped Rice Krispie treats. Refer to the full, printable recipe card below for detailed instructions.
1. Melt Marshmallows and Butter Rice Krispies
First, line a baking sheet with parchment or wax paper. In a large pan over medium heat, melt butter; add the marshmallows and stir until completely melted and smooth. After you melt the butter and marshmallows, remove from heat and add in Rice Krispies cereal, and stir to evenly coat the cereal.
2. Shape the Treats
Spread the cereal mixture evenly into the lined baking sheet and press gently, using your hands to press the mixture. To keep it from sticking, you can spread butter on your hands or use a piece of wax paper. Allow the cereal mixture to cool completely.
3. Cut Into Squares
Gently lift the cooled Rice Krispies treats out of the prepared pan and sit on a flat surface that you can safely cut on. Cut the cereal treats in half down the middle and then down the center lengthwise, then cut each quarter into thirds creating rectangle pieces. Next, trim the corners off of the rectangular pieces to create a popsicle shape. Press a popsicle stick into the bottom of your popsicle shaped Rice Krispies treat and repeat with all 12 pieces.
4. Melt the Chocolate
In a double boiler or a heat safe bowl over a pot of simmering water, melt your candy melts; you can also use a microwave safe bowl and microwave for 1 minute. You want the chocolate coating to be smooth. If it is too thick once the chocolate is melted, you can add shortening; add it in a ½ tsp at a time until the consistency is creamy and smooth.
5. Dip into Candy Melts
Next, lay wax or parchment paper flat on your counter and table. Dip the top ¼ of each popsicle into your candy melts, you can also use a spoon or spatula to spread it on the area you’d like to cover. Then, lay the dipped popsicle on your prepared surface to cool, and repeat with each popsicle until they are all dipped. Set the chocolate and allow excess chocolate to drip off. I dipped mine in all three colors but you can dip in one color and drizzle with the others; the choice is yours!
6. Decorate the Treats
Place the remaining melted chocolate in a piping bag and cut off the tip, drizzle your popsicles with the chocolate. Sprinkle with sprinkle while the chocolate is still soft and allow to cool completely. Wrap individually with plastic wrap, or store in an airtight container until ready to serve.
