Take your burgers from boring to amazing with this perfect homemade burger recipe.  It’s just the right combination of burger meat and seasoning all cooked or grilled to perfection at just the right temperature.  No more dried out hamburger patties or flavorless burger meat mix.  This is the recipe for the perfect burger.

Making the perfect burger is something that is very easy to do and doesn’t take much effort. But the outcome is amazing. You end up with a juicy, flavorful burger patty, topped with your favorite fixins’ and sandwiched between a soft bun. Perfection.

The recipe works because it’s using the right type of beef and an incredibly flavorful seasoning blend.  Then, it’s cooked to just the right temperature so that it stays juicy on the inside.

How to Make the Perfect Burgers Recipe – Step by Step

  • STEP 1: Start with an 80/20 blend of ground chuck. (Photo 1 below)
  • STEP 2: Add homemade Burger Seasoning Blend. (Photo 2 below)
  • STEP 3: Form into hamburger patty using a burger press. (Photo 3 below)

  • STEP 4: Remove from burger press. (Photo 1 below)
  • STEP 5: If grilling the burgers right away, set on a plate or tray. (Photo 2 below)
  • STEP 6: If freezing for later, store in freezer bags with parchment sheets between them. (Photo 3 below)

  • STEP 7: Press a divot into each patty.  Then brush one side with a bit of vegetable oil. (Photo 1 below)
  • STEP 8: Place, oil side down, on preheated grill and grill to 155 degrees (for medium-well).   Allow to rest for 5 minutes or until temperature reaches 165 degrees F.  (Photo 2 below)

What is the Best Burger Meat to Use?

The best type of burger meat to use in a ground chuck.  I’ve found that an 80/20 mix is perfect.  80/20 means that the beef is 80% lean.  It provides the right amount of fat to yield a perfectly juicy burger.

If you want to get more involved, you can also grind your own burger meat.  I like using ground chuck and ground short rib in mine.  It’s something you should play around with to find the right mixture for your family.

How to Form the Perfect Hamburger Patty

Forming a perfect hamburger patty is super simple when you know how to do it.  You want to make sure it’s the same thickness all the way around and that its nice and firm.  You don’t want your burger falling apart on the grill, after all.

I’ve found the best way to ensure my burgers are just right every time is to use a burger press.  This will ensure that every hamburger patty is the same size and thickness and it presses it into a firm patty that won’t fall apart.

Once your burger patty is formed, you want to press a little divot into the center.  This will ensure that it doesn’t puff up in the center when cooking.

How Long to Cook Burgers on the Grill

One of the keys to the perfect burger is knowing how long to cook burgers on the grill.  According to this article, you should cook your burger patty to 165 degrees F.  This means, you’ll want to pull it off the grill when the burger temperature is around 155 degrees F because the meat will continue to cook while resting.  The best way to know when you’re burger is at the perfect temperature is to use a meat thermometer.

Which brings me to my next tip.  Let the burger rest for a few minutes before digging in.  You want all of the juices to redistribute throughout the burger.  If you cut or bite right into it, all of the delicious juice will come pouring out.

You also want to make sure you don’t press down on the burger while it’s cooking.  This will cause all of the juices to drip out of the burger into your grill. Not only will your burger be dry, but it will also cause flare-ups on your grill.

Homemade Burger Patty

  • Preheat grill to medium high.
  • In a large bowl, combine ground chuck and Burger Seasoning Blend.
  • Gently mix with hands until just combined. Be careful not to over-mix.
  • Divide meat into 6 equal portions and form into patties.
  • Brush one side of each patty with vegetable oil.
  • Place oil side down and grill over medium high heat for about 6 minutes per side for medium well or until center reaches 160 degrees F. (If you prefer rare, grill for 4 minutes per side.)
  • Remove burgers from grill and allow to rest for 5 minutes allowing the meat to come up to 165 degrees F.
  • Serve with your favorite toppings, such as my Burger Sauce.
