1. Making Brown Sugar Glaze

Start by preheating the air fryer to 350 degrees. In a small saucepan over medium heat add the brown sugar, Dijon mustard, apple cider vinegar, ground cinnamon and black pepper. Simmer until thickened. Remove from heat, allow the ham glaze to cool for 1-2 minutes.

Recipe FAQs to Cook Ham

City ham and country ham are two distinct types of cured pork with different curing methods that result in contrasting flavors and textures. You can use either ham for this recipe.

  • Curing method: City ham is wet-cured in a brine solution for a shorter period, typically just weeks. The brine is a saltwater solution that may also include flavorings like sugar, spices, or nitrates.
  • Preparation: City hams are typically sold as a pre-cooked ham and ready to eat. You can slice them for sandwiches, salads, or charcuterie boards.

Country Ham:

  • Curing method: Country ham undergoes a dry-cure process. The ham is rubbed with a mixture of salt and other seasonings, then hung to dry for months or even years. This slow drying process allows the flavors to concentrate and develop a deeper complexity.
  • Preparation: Country ham is typically sold raw and requires soaking to remove some of the saltiness before cooking. It can be baked, fried, or thinly sliced for appetizers.

The internal temperature of precooked ham should reach at least 145°F. The time doesn’t have to be exact, since the ham is already cooked.

Of course you can cook a glazed ham steak in the air fryer but you can use a small ham in the air fryer. Check your manual to see what size fits in your air fryer.

Store cooked ham in an airtight container or tightly wrapped in plastic wrap or aluminum foil to prevent drying out. Use leftover ham slices by reheating in the air fryer. Brush with the glaze. Ham is fully cooked so it just has to be warm.
