- 1 tablespoon Avocado oil
- Salt , to taste

- 2 cups Broccoli florets
- 1 Red bell pepper, chopped
- 2 cups Fresh pineapple, cut into bite-sized pieces
- Sliced green onions, optional garnish
- Toasted sesame seeds, optional garnish

- ¼ cup Soy sauce, certified gluten free if necessary
- ¼ cup Pineapple juice
- 1 teaspoon Sesame oil
- 3 tablespoons Honey
- 2 teaspoons Minced garlic
- ¼ teaspoon Ground ginger
- 2 teaspoons Cornstarch
Instructions
- Pour one tablespoon of avocado oil into a large skillet, then put the skillet on medium-high heat. When hot, add the cubed chicken, then sprinkle with salt and pepper. Cook the chicken for about 4 to 5 minutes.
- Add broccoli florets, chopped red bell pepper and pineapple pieces to the skillet. Stir and continue cooking for 5 more minutes or until the chicken is cooked through and the vegetables are soft.
- When chicken and veggies are cooking, you can prepare the sauce. Combine together soy sauce, pineapple juice, sesame oil, honey, minced garlic, ground ginger, and cornstarch into a small mixing bowl. Using a whisk, mix until thoroughly combined
