The pancakes are definitely a lot easier to make and much less time consuming than a traditional cinnamon roll would be but it has all the taste and ooey gooey icing that you crave.
How to Make These Cinnamon Swirl Pancakes
- Make Pancake Batter: First, prepare pancake batter according to direction.
- In a Large Bowl : Next, in a microwave safe medium bowl, combine and whisk the butter, brown sugar and cinnamon until smooth.
- Microwave Mixture: Then, microwave on high for 10 second increments until it is soft and can be squeezed through a piping bag. Next, transfer mixture into a pastry bag fitted with a medium tip. Or, you can use a Ziploc baggie with the corner snipped off.
- Heat Your Griddle: Then, pour pancake batter onto medium heat griddle. Next, pipe the cinnamon filling onto batter in a swirl shape. If you do not have a griddle, a large nonstick skillet will work as well.
- Flip: Finally, when pancakes are lightly browned, flip with a thin spatula and cook until done.
- Make Icing: First, add all of the ingredients to the bowl of an electric mixer. Then, stir until smooth. If icing is too thick add more milk until desired consistency is reached.
- Place Icing in Bag:Next, transfer the icing into another pastry bag or Ziploc bag.
- Squeeze the Icing: Finally, drizzle the icing on top of the pancakes.

- 1 stick butter, softened
- 1 cup brown sugar
- 2 Tbsp cinnamon
Cream Cheese Icing
- 2 cups powdered sugar
- 2 ounces cream cheese
- 1 teaspoon vanilla
- 4 tablespoons milk
