Why this Chicken Tater Tot Casserole Recipe is a Keeper
My chicken tater tot meal hits that sweet spot of being comforting, convenient, and surprisingly versatile, making it a winner for a great dinner.
- Crowd-Pleasing: The combination of chicken, cheese, and tater tots is generally a hit with both kids and adults.
- Versatile: It’s highly adaptable to different spice levels with garlic powder and ingredient preferences. Use cream of chicken soup, chicken and bacon or whatever you like.
- Great Way to Use Leftover Chicken: If you have cooked chicken on hand, this casserole comes together even faster.
- One-Dish Meal: It offers a complete meal with protein, vegetables (often hidden!), and a satisfying carb element. Like a chicken pot pie it is perfect for a potluck.
Can I make the casserole in the slow cooker or instant pot?
Yes, you can definitely adapt your Fiesta Chicken Tater Tot Casserole to be made in a slow cooker! However, you’ll need to adjust the method, especially for the tater tots, to prevent them from becoming soggy. Cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is cooked through (if you started with raw chicken) and the other ingredients are heated. Remove from the crock pot and place in a 9×13 dish and place the tater tots on top and bake the casserole until the tots are crispy.
Pro Tip for Tater Tot Chicken Casserole Recipe
Let it Rest: Allow the casserole to rest for a few minutes after baking before serving. This helps it hold its shape and prevents it from being too runny.

Prep Ahead Suggestions for Cheesy Tater Tot Comfort Food
You can prepare a lot of this family-friendly dinner. The kids love this recipe so you will want to make it often.
- Cook the Chicken: If you’re not using leftover chicken, cook and shred it ahead of time. You can boil, bake, or slow-cook the chicken.
- Chop Vegetables: Dice onions, bell peppers, or any other vegetables you plan to include and store them in the refrigerator.
- Make the Sauce (Partially): If your recipe involves a homemade sauce, you can prepare it a day in advance and store it in the refrigerator.
- Grate Cheese: Grate the cheese and store it in an airtight container.
- Combine Shredded Chicken and Sauce: You can mix the cooked chicken with the sauce and any canned vegetables (corn, beans) and refrigerate this mixture. Assemble the casserole with the tater tots and cheese just before baking.
How to Store, Reheat and Use Leftovers of this Family Favorite
- Storing: Transfer to airtight containers: Cut the casserole into individual portions or store the remaining amount in shallow, airtight containers. Shallow containers help the casserole cool down and reheat more evenly. Refrigerate: Store the sealed containers in the refrigerator for up to 3-4 days. It is a great freezer meal too.
- Reheating: The goal is to reheat the casserole thoroughly while trying to crisp up the tater tots as much as possible.Bake uncovered for 20-30 minutes, or until heated through and the tater tots are somewhat crispy. You can broil for the last few minutes, watching carefully, to further crisp the tater tots.
- Using Leftovers: Taco Filling: Break down the casserole and use it as a flavorful filling for tacos or burritos. You might want to add a little extra salsa or hot sauce. Nachos Topping: Spread crushed tortilla chips on a baking sheet, top with the leftover casserole, sprinkle with extra cheese, and bake until bubbly. Add your favorite nacho toppings like jalapenos, sour cream, and guacamole. Breakfast Hash: Dice the leftover casserole and sauté it in a skillet with a bit of oil until heated through and slightly crispy. Top with a fried egg for a hearty breakfast or brunch.
Common Questions About This Family Favorite Recipe
Don’t Thaw the Tater Tots: Always add the tater tots to the casserole frozen. Thawing releases moisture, which will lead to a soggy topping.
Add Tater Tots at the Right Time: If you’re making the base of the casserole in a slow cooker, as we discussed, add the frozen tater tots in the last 45-60 minutes of cooking on low, or 20-30 minutes on high. This minimizes their exposure to the moist environment. If baking entirely in the oven, add them as the final step before baking.
Arrange in a Single Layer: Spread the frozen tater tots in a single, even layer on top of the filling. Overlapping tots will trap steam and prevent them from crisping. You might need to use a larger baking dish if you have a lot of tater tots.
Assemble the casserole in a freezer-safe dish, cover tightly with plastic wrap, and then with aluminum foil. Freeze for up to 3 months. Thaw overnight in the refrigerator before baking as directed in the original recipe (you may need to add a bit more baking time).
The casserole itself should be heated through to at least 165°F (74°C) as well. This ensures all the ingredients are hot and any potential bacteria are killed. Check the temperature in a few different spots in the center of the casserole.
Of course, you can use ground chicken or turkey. You can even use ground beef.
