1. Brown Beef and Cook Veggies
Add your ground beef to a skillet on the stove and cook until brown. Once done, drain. Add in onions and jalapeños and cook for another few minutes. Add meat and veggie mixture to the crock pot.
2. Whisk Ingredients in Crock Pot
Add in the garlic, chili powder and cumin. Then, mix in your Rotel and salt and pepper. Whisk in the evaporated milk, butter and cornstarch. Turn your crock pot to high and allow the mixture to bubble.
3. Add Cheese to Melt
Mix in all of the cheese and cook on low or warm and put your lid back until the cheese is completely melted.
Remove the lid, transfer cheese sauce to your favorite serving bowl, and enjoy!

Ingredients
- 1 pound Ground beef, you can also use ground turkey for a healthier alternative
- 2 tablespoons Unsalted butter
- 2 tablespoons Cornstarch
- ½ White onion, chopped
- 1 Jalapeno, diced (remove seeds or keep seeds for a spicier queso!)
- 2 tablespoons Garlic, minced
- 1 teaspoon Chili powder
- ½ teaspoon Ground cumin
- 12 ounces Evaporated milk, 1 can, or half n half
- 10 ounces Rotel, 1 can
- ¼ teaspoon Salt, to taste
- ¼ teaspoon Black pepper
- 3 cups Fiesta blend cheese, shredded
Instructions
- Add your ground beef to a skillet on the stove. Sauté until brown. Once done, drain, and set the meat aside.
- Add in your onions to the beef and cook until they soften. Once the onions are done, add your jalapeños and let cook for another few minutes. Add meat and veggie mixture to the crock pot.
- Add in the garlic, chili powder and cumin. Then, mix in your Rotel and salt and pepper. Stir all of the ingredients together.
- Pour in the evaporated milk, butter and cornstarch. Turn your crock pot to high, whisk ingredients together well and allow the mixture to bubble.
- Add in all of your cheese and mix. Turn your crock pot down to low or warm and put your lid back on to let the cheese melt.
- Remove the lid, transfer to your favorite serving bowl, and enjoy!
