1. Make the Beef Sausage Mix

In a large bowl, add the ground beef, red wine vinegar and taco seasoning. Heat a skillet over medium heat and add beef mixture. Cook for 8 to 10 minutes, breaking into crumbles. Drain any excess fat from the pan.

2. Add Salsa and Peppers to Taco Meat

Add salsa and green chiles to beef mixture in the skillet and cook for 2 to 3 minutes.

3. Assemble Nachos

Preheat oven broiler to high and line a baking sheet with foil. Spread the tortilla chips in single layer on the rimmed baking sheet, followed by the beef and beans, and sprinkle shredded cheese.

4. Broil and Add Toppings

Beef Sausage

  • 1 pound Ground beef
  • 2 tablespoons Red wine vinegar
  • 3 tablespoons Homemade Nacho Seasoning

Beef Sausage Nachos

  • Beef sausage, prepared, recipe included
  • ½ cup Salsa
  • 4 ounces Diced mild green chiles, drained
  • 8 ounces Tortilla chips
  • 1 cup Canned black beans, drained, rinsed
  • 1 ¾ cups Shredded Mexican cheese blend
  • 2 cups Thinly sliced lettuce
  • 1 cup Diced seeded tomatoes
  • Garnishes: sliced avocado, fresh chopped cilantro leaves, sliced ripe olives, sour cream, sliced jalapeño peppers, lime wedges

Instructions
 

Beef Sausage

  • In a large mixing bowl, combine ground beef, red wine vinegar, and taco seasoning.
  • Heat large skillet over medium heat.
  • Add sausage mixture and cook 8 to 10 minutes, breaking into ½ inch crumbles.
  • Drain any excess fat from the pan.

Beef Sausage Nachos

  • Add salsa and green chiles to sausage mixture to a large skillet and cook 2 to 3 minutes or until heated through.
  • Preheat oven broiler to high.
  • Line a rimmed baking sheet with non-stick foil and spread tortilla chips in single layer.
  • Spread beef sausage mixture evenly over the chips.
  • Top with beans and cheese.
  • Broil for 5 to 8 minutes or until cheese melts. Remove from the oven.
  • Top with lettuce and tomatoes and garnish with cilantro, olives, sour cream, jalapeños and lime wedges, or any of your other favorite nacho toppings.
