This stuffed peppers recipe comes together in 3 quick and easy steps. These air fryer stuffed peppers with ground beef are so good, they quickly became one of my favorite meals.

- Make Meat Mix: Brown the meat in a large saucepan. Then add in the olive oil, oregano, garlic powder, dry parsley, salt and pepper to the beef and cook for a couple minutes. Then, add in the cooked rice, onions and diced tomatoes.
- Assemble Peppers: While the beef mixture is cooking, slice and scrape the seeds out of the peppers. Scoop the meat filling into each pepper half, then place in the air fryer basket.
- Cook the Peppers and Top: Cook for about 7 minutes in the air fryer, or until the peppers start to brown. Top off the peppers with freshly grated Romano cheese.

Ingredients
- 1 pound Ground Beef, or and ground meat of your choosing such as beef or chicken
- 1 Tablespoons Olive oil
- ½ cup Diced tomatoes, seasoned with garlic and basil
- ¼ cup Chopped green onion
- 1 teaspoon Oregano
- 1 teaspoon Garlic powder
- 1 Tablespoon Dried parsley
- ¼ teaspoon Salt, a dash
- ¼ teaspoon Pepper, a dash
- 1 cup Cooked rice
- 3 Bell peppers
- Grated Romano cheese, garnish
Instructions
- Preheat the air fryer to 400℉.
- In a saucepan, brown the ground meat. Add the oil and spices. Cook for 3 minutes. Add the rice, onions, and tomatoes. Cook for 5 minutes.
- Cut the peppers in half and remove the seeds. Scoop meat filling into each pepper half and place in the air fryer basket.
- Cook for 6-8 minutes or until peppers start to brown slight.
- Garnish with Romano cheese.

- Cauliflower Rice: To sneak in some extra veggies, use cauliflower rice.
- Italian Sausage: Add crumbled Italian sausage in place ground meat in these air fryer stuffed peppers.
- Mozzarella Cheese: For an extra cheesy touch, top stuffed peppers with mozzarella cheese before cooking in the air fryer.
- Tex-Mex: For a Tex-Mex flavor inspired stuffed peppers, add in seasoning such as cumin, chili powder, and Mexican seasoning blend. Top with Mexican cheese blend or cojita cheese.
