- Chicken Broth: You can use chicken, beef, or vegetable broth, however I recommend using chicken broth. Additionally you could also use cooking white wine.
- Pasta: I used rotini, but penne or any other pasta shape of your choice will work.
- Green Peas: You will need frozen peas.
- Chicken: You will need cooked chicken. You can use a rotisserie chicken. This a great way to use leftovers. You can also use turkey.
- Parmesan Cheese: For this recipe you will need grated parmesan cheese.
- Flour: You will need 1/4 cup flour. I recommend using all purpose.

How to Make Chicken Tetrazini Recipe

STEP 1: PREPPING
Start by chopping up chicken into small 1 inch pieces, diced up your onion, and slice the mushrooms. Prepare your pasta according to package instructions.

In the pot add flour to the the butter to create a roux, then whisk in milk. Season sauce with 1 teaspoon salt and 1 teaspoon pepper and mix. Turn to medium-low heat and allow to cook for about 8 minutes to thicken the sauce then stir in seasonings, chicken broth, chicken, peas, and pasta.
STEP 4: COOK CHICKEN TETRAZZINI
Set the oven to broil. In an 8×8 inch casserole dish, fill with pasta chicken mixture and sprinkle parmesan cheese on top. Place the casserole dish in the oven and broil until the cheese is perfectly golden brown. Remove from the oven, top with fresh parsley and serve!

- 4 Tablespoons Butter, divided
- 1 Medium Onion, diced
- 1 cup Sliced Mushrooms
- ¼ cup All-Purpose Flour
- 2 cups Milk
- Salt and Pepper, to taste
- 1 teaspoon Fresh thyme
- ½ cup Chicken Broth
- 8 oz Pasta, approximately 2 1/2 cups
- 1 cup Frozen Peas, thawed
- 2 cups Cooked chicken, chopped
- ¼ cup Grated Parmesan Cheese
Instructions
- Melt 2 Tablespoons of butter in a large pot over medium heat.
- Once hot and melted, add the onions and cook until golden, about 4 minutes.
- Add the sliced mushrooms and cook until your desired color and texture. (We did 4 minutes.)
- Remove the onions and mushrooms to a small bowl.
- Place the remaining butter in the pot.
- Meanwhile, prepare the pasta according to package directions.
- Whisk the flour into the hot, melted butter to form a roux, then whisk in the milk. Season with salt, pepper and thyme and cook for 8 minutes until thickened.
- Stir in the chicken broth, pasta, green peas and cooked chicken and cook until chicken is warmed through.
- Set oven to broil.
