STEP 1: CRUSH
First, crush 9 of the cookies to fine crumbs in food processor; reserve for later use. Then crush remaining cookies to a fine crumb, then add cream cheese, mix until well blended.
STEP 2: ROLL
Then roll cookie mixture into 42 balls, about one inch in diameter. Next, melt chocolate in the microwave and then dip balls with a fork into the chocolate and place on a lined baking sheet, allow any excess chocolate to drip off. Sprinkle with reserve oreo crumbs.
STEP 3: COOL
Finally, refrigerate until firm, about 1 hour. Store leftover truffles, covered, in fridge.

- 16 ounces Semi-Sweet Baking Chocolate, melted, 8, 2 packages

- Crush remaining 36 cookies to fine crumbs; place in medium bowl.
- Add cream cheese; mix until well blended.
- Roll cookie mixture into 42 balls, about 1-inch in diameter.
- Dip balls in chocolate; place on wax paper-covered baking sheet.
- Any leftover chocolate can be stored at room temperature for another use.
- Sprinkle with reserved cookie crumbs or other toppings.
- Refrigerate until firm, about 1 hour.
