- Cherry Pie Filling: Canned pie filling from the store is great, but you can also make a homemade pie filling.
- Full-Fat Cream Cheese: I prefer to use a block cream cheese like Philadelphia cream cheese. Beat cream cheese with a little sour cream for a tangier flavor.
- Crescent Rolls: Crescent rolls make the perfect base for this mini cheesecake recipe.
Variations and Substitutions for No-Bake Cheesecake Recipe
Easily customize this cheesecake bites by experimenting with different ingredients and trying different flavors.
- The Dough: If you can’t find refrigerated crescent rolls, puff pastry squares work beautifully and provide even more height.
- The Extract: Try using vanilla bean paste, instead of extract. You could even swap vanilla for almond extract. Almond and cherry are a classic pairing that makes the recipe taste much more “gourmet.”
- The Filling: Don’t stop at cherry! Try this recipe with your favorite topping like blueberry, apple, or even lemon curd for a citrus twist. One of my favorites is to make mini oreo cheesecake bites that i drizzle with melted semisweet chocolate.
- Graham Cracker: Sprinkle a little bit of graham cracker crumbs into the cheesecake filling or on top of the cherry pie topping. This will bring the flavor a buttery graham cracker crust. Easily crush some in a food processor.
- Mini Cheesecakes: To make this more like regular cheesecake, make a crust instead of dough. Press into a mini muffin tin and fill with the same cheesecake mixture. Top with pie filling and bake for a couple minutes (or not).
Special Equipment Needed to Make Cheesecake Bites
Although there aren’t any special tools needed to make the cheesecake bites, a couple things are super helpful after it’s done baking. No need for a mini cheesecake pan.
- Parchment Paper or Silpat Liner: Crescent dough is notorious for sticking to naked baking sheets once the sugar from the fruit bubbles over. Use muffin liners for easy removal if using a muffin tray.
- Pizza Cutter: The fastest way to slice the crescent dough into even squares.
- Mixer (optional): Use a hand mixer to efficiently beat the cream cheese.

Make Ahead Suggestions for No-Bake Cheesecake Bites
Since this recipe is already super easy, there’s really only one thing you can do ahead of time.
- Cheesecake Batter: You can whisk up the cream cheese filling up to 2 days in advance. However, don’t assemble the bites until right before baking, or the dough will absorb the moisture and won’t rise.
- Make the Crust: If you’re opting for a traditional graham cracker mixture crust, you can make it ahead of time and store until ready to use. you could even do this with crushed Oreo cookie crust.
Alternate Cooking Methods for the Easy Dessert
Make this recipe extra easy and make them in the air fryer.
- Air Fryer Method: This easy and delicious recipe is perfect for the air fryer. Cook at 325°F for 8-10 minutes. They get much puffier and crispier than in a standard oven. Let cool and add a dollop of whipped cream on top.
Store and Use Leftover Cheesecake Bites Recipe
- Store: Store cheesecake bites in the refrigerator in an airtight container for up to 3 days. Cover them loosely so the pastry doesn’t get too soft.
- Reheat: For best results, use a toaster oven or air fryer at 300°F for 3 minutes. The microwave will make the crescent dough rubbery.
- Leftovers: Chop up any “ugly” leftover bites and fold them into a bowl of warm oatmeal or Greek yogurt for an elite breakfast.

Tips for Making Mini Cheesecake Bites
- Seal the Seams: If using standard crescent rolls (not the “sheets”), make sure to pinch the perforations firmly. If the filling leaks through the seams, it will glue the cheesecake crust to the pan.
- The “Two-Cherry” Rule: When topping the bites, try to place exactly two cherries in the center of each. It ensures every bite has fruit without the filling overflowing and making a mess.
- Egg Wash for Glow: Brush the exposed edges of the crescent dough with a little beaten egg or melted butter before baking for that professional golden-brown shine.
