  • Unsalted butter, softened, 6 tablespoons.
  • Lime juice
  • Honey
  • Chili powder
  • Salt: Sea salt works well for this dish. Kosher salt can also be used.
  • Cayenne Pepper
  • Corn, 6 ears husked
  • Cilantro, fresh, chopped

How to Make Corn on the Grill no Husk

These are the basic steps for making chili corn on the cob. Please refer to the recipe card below for more detailed instructions and nutrition facts.

STEP 1: MIX

First, in a small bowl, combine butter and honey. Next, add chili powder, and salt and then squeeze in fresh lime juice and mix well.

STEP 2: GRILL

Then add the Cayenne Pepper, mix again, and put in the refrigerator to firm up. Finally, preheat the grill to medium-high heat and grill the corn.  Brush corn with Chili Lime Butter before serving.

HOW TO MAKE THIS CHILI AND LIME RECIPE AHEAD OF TIME

Peel the corn and store in the fridge in a zip top bag. Make the marinade and store in an airtight container and warm up in the microwave when you are ready to use.

HOW TO STORE THIS CORN ON THE COB SEASONING RECIPE

Store in an airtight container in the refrigerator. Cooked corn on the cob will usually stay good for 3 to 5 days.

HOW TO FREEZE THIS RECIPE

Corn can stay frozen for up to a month. Grill frozen corn for 25-30 minutes on medium heat.

HOW TO REHEAT THIS RECIPE

Place your corn on a microwave-safe plate. Add 1 to 2 tablespoons of water to the dish and cover it with a plate or damp towel. Then microwave it on medium for 45 seconds and flip the corn over. Microwave for another 30 to 45 seconds.

This Grilled Corn with Chili Lime Compound Butter is a Tex-Mex twist on a summer classic.  Summer and Sweet Corn are a marriage made in heaven. But plain sweet corn can get a little predictable. So I took some inspiration from one of my favorite Iron Chefs, Bobby Flay, and created a Chili Lime Grilled Corn recipe that is salty, sweet, spicy and creamy. Yum!

Ingredients

  • 6 tablespoons unsalted butter, softened
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • teaspoon cayenne
  • 6 ears of corn, husked
  • teaspoon cilantro, chopped

Instructions

  • In a small bowl, combine butter, lime juice, honey, chili powder, salt and cayenne until mixed well.
  • Preheat grill to medium high.
  • Place corn on preheated grill and grill for 6-8 minutes, or until slightly charred and cooked through.
  • Remove corn from grill and brush with Chili Lime Compound Butter. Garnish with Cilantro.
