Why this Strawberry Vanilla Cake Recipe is a Keeper

This fluffy vanilla cake with strawberry filling may seem a bit different than other cakes you may have made. There aren’t any cake layers, nor do you have to frost the cake. It’s packed with strawberry flavor, but this moist vanilla cake with strawberries is an upside down cake, so the bottom layer of strawberries ends up on the top of the cake. Here are some reasons why this is one of the best cakes to make:

  • Easy Ingredients: All of the ingredients for this vanilla strawberry cake recipe can be found in your kitchen or local grocery store.
  • Family Friendly: This strawberry upside-down cake is perfect for holidays and special occasions. It’s the perfect summer cake, as it’s full of sweet strawberries in time for strawberry season, and even makes a great birthday cake.
  • Adaptable: Adjust the ingredients in this homemade strawberry cake recipe according to your preferences and dietary needs.

How Do I Remove the Cake from the Pan?

If you’re having trouble removing your cake from the pan, use a knife to loosen the sides of the cake. You can also turn the cake upside down and gently tap it to get it to slide out.

Strawberry Cake Ingredients

  • Self-Rising Flour: Self-rising flour will give you a tender cake. You can also use cake flour. If you don’t have it, you can use all-purpose flour instead of cake flour.
  • Fresh Strawberry Cake: Use sliced strawberries to give this homemade vanilla cake a delicious strawberry filling.
  • Buttermilk: Add buttermilk for a moist cake.

See the recipe card below for a complete list of the ingredients with measurements.

Prep Ahead Suggestions for Strawberry Single Layer Cake

  • Strawberries: Slice the strawberries before baking them into this white cake recipe. If they’re in season, you can pick fresh strawberries at your local U-pick farm. If you have frozen strawberries, you’ll need to thaw them out first.

Cake Layer Pro Tip

After taking the cake from the oven, place a towel over the cake to press down and compress any dome that might’ve appeared during baking.
