What You Need to Make Compound Butter

Ingredients

  • Heavy whipping cream: This recipe makes the butter from scratch using heavy cream. However, you can easily shortcut this but using unsalted butter instead.
  • House Seasoning Blend
  • Fresh thyme: You really should use fresh thyme for this recipe. While dried thyme will work in a pinch, the flavor will be much better if it’s fresh.
  • Fresh Rosemary: Just like the thyme, fresh Rosemary works best in this recipe.

How to Make Garlic Herb Butter

  • In Blender: First, place the heavy cream in a stand mixer and whisk on medium speed for 3 minutes. Once thickened, increase the speed to high and whisk for 5 minutes out until butter form in the whisk and separates from the buttermilk.
  • Next Step Here: Second, once butter is formed strain away from buttermilk using cheese cloth. Form the butter into a ball and drain the butter milk. Discard or use the butter milk and then add butter, garlic, House Seasoning Blend, minced thyme and minced Rosemary back into the mixture; Mix together for 2 minutes.
  • Use: Finally, use immediately or form into a log and refrigerate for 1-2 weeks.

  • 4 cups heavy whipping cream
  • 2 tablespoons garlic, minced
  • 4 teaspoons House Seasoning Blend
  • 4 teaspoons fresh thyme, minced
  • 2 teaspoons fresh Rosemary, minced
