  • Chicken: Shredded or ground chicken. Also a great way to use up leftover chicken. Chicken thighs would work well too!
  • Ranch Dressing Mix: Use a packet of dry ranch seasoning.
  • Broccoli: Could use either fresh broccoli or frozen broccoli florets.

How to Make Insta Pot Chicken and Broccoli Casserole

These are the basic steps for making Insta Pot Chicken and Broccoli Casserole. Please refer to the recipe card below for more detailed instructions.

STEP 1: COOKING THE CHICKEN

First, season chicken with salt and pepper then cook in the instant pot for 9 minutes on high. To stop the pressure cook, use the quick release feature. Then take out and shred chicken.

STEP 2: COOKING THE ONIONS AND GARLIC

On the saute setting of the Instant Pot, cook the diced onions and minced garlic with a little bit of olive oil until soft.

STEP 3: ADDING THE RICE

Once you’ve added the chicken broth and Worcestershire sauce to deglaze bottom. Then add rice and ranch mix, stir. Pressure cooking time will take 7 minutes on high. Make sure to release the manual pressure valve.

STEP 4: FINISHING TOUCHES

After it is done cooking, add cooked broccoli and shredded cheese, stir, and it is ready to be served!

To make this recipe ahead of time, simply follow the recipe as instructed but hold off on adding the broccoli and cheese. Refrigerate rice and chicken mixture for up to one day. Reheat rice and chicken mixture in an oven safe dish at 350 degrees and bake for 20 minutes. When the casserole is taken out of the oven add in cooked broccoli and shredded cheese and stir.

Ingredients

  • 2 chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ onion diced
  • 2 tablespoons minced garlic
  • 1 package of ranch dressing mix
  • 1 tablespoon Worcestershire sauce
  • 3 cups chicken broth
  • 2 cups rice
