Why Won’t my Chocolate Chips Melt?

Chocolate chips can be tricky to melt as they’re designed to hold their shape when they get warm. Feel free to use melting chocolate if you prefer to deal with something a bit easier!

Ingredient Notes to Make Chocolate Covered Pineapple

A white bowl with pineapple slices, a small bowl of chocolate chips, and a small bowl of shredded coconut are arranged on a dark surface.

You will need just a few easy ingredients to make this delicious, sweet treat. You may not have a couple of these ingredients in your kitchen, but that’s ok since they’re super easy to find at the store.

Variations and Substitutions to Make this Recipe

There are so many variations you could make of this pineapple with coconut. Try it with different toppings and different chocolate instead.

  • Nuts: If you’re allergic to coconut, or just don’t like it, you can top these pineapple slice with chopped macadamia nuts or almonds.
  • Different Fruit: You can make anything chocolate covered! Try strawberries, blueberries, raspberries, peaches or any other fruit.
  • Sugar Free Chocolate: To make this recipe with a little less sugar, use a sugar free chocolate.
  • Pineapple into rings: You can take the pineapple and cut or slice it into rings instead of wedges.

Pro Tip to Get Chocolate to Stick

One of the biggest culprits for chocolate clumping or not adhering properly is moisture. Ensure the pineapple is completely dry before dipping. A gentle pat with a paper towel is usually sufficient.

A pan showing shredded coconut before (image 1) and after (image 2) toasting, turning from white to golden brown. Imagine this crispy topping on chocolate-covered pineapple for a delightful treat!

1. Prep Coconut and Chocolate

In a small skillet over medium heat toast the shredded coconut, stirring often, until golden brown then set aside to cool. Melt the chocolate chips in a microwave safe bowl and stir until smooth.

If using fresh pineapple, now is the time to slice the pineapple. Cut the pineapple into wedges.

2. Dip the Pineapple in Melted Chocolate

Pat the pineapple pieces dry with a paper towel before dipping. When chocolate is melted, dip each pineapple bite at an angle into the chocolate to coat the pineapple. Gently tap off excess chocolate and place the pineapple on a parchment paper lined tray. For a thicker layer repeat until the chocolate is the thickness you desire.

3. Top with Toasted Coconut and Chill until Chocolate is Completely Set

Sprinkle with the prepared toasted unsweetened shredded coconut right away before chocolate sets. When finished, lay the chocolate pineapple bites tray in fridge for at least 30 minutes to allow the chocolate to harden. Serve immediately and enjoy!

A bowl of melted chocolate with a spoon sits beside a pineapple slice on a paper towel. Nearby, a pineapple slice is partially dipped in chocolate. Finally, the piece de resistance: a chocolate-covered pineapple slice topped with toasted coconut.
