1. Prep Coconut and Chocolate
In a small skillet over medium heat toast the shredded coconut, stirring often, until golden brown then set aside to cool. Melt the chocolate chips in a microwave safe bowl and stir until smooth.
If using fresh pineapple, now is the time to slice the pineapple. Cut the pineapple into wedges.
2. Dip the Pineapple in Melted Chocolate
Pat the pineapple pieces dry with a paper towel before dipping. When chocolate is melted, dip each pineapple bite at an angle into the chocolate to coat the pineapple.
