  • Pumpkin Puree: This recipes uses both pumpkin pie spice and real pumpkin puree. I used just used canned pumpkin puree.
  • Pumpkin Pie Spice: Pumpkin pie spice is a combination of cinnamon, nutmeg, ginger, ground cloves, and allspice. Make your own with this recipe.
  • Granulated Sugar: Sugar will bring that bit of sweetness. You can also use a more natural sweetener such as maple syrup or honey.
  • Vanilla: You will need vanilla extract.
  • Coffee: You will need strong brewed coffee or shots of espresso.
  • Whipped Cream: Use canned whipped cream or make your own.

STEP 1: MAKE THE PUMPKIN MILK

In a small pot over medium heat, add the milk, pumpkin puree, and sugar, stir until combined. Just before the mixture is about to boil remove from heat add vanilla and pumpkin pie spice, then transfer to a cup and allow to cool in the fridge for at least 30 minutes.

STEP 2: CREATE ICED PUMPKIN SPICED LATTE

To a glass of ice pour in the milk mixture, then add the coffee. Top with whipped cream and a sprinkle of pumpkin spice. Enjoy immediately!

Ingredients

  • 2 cups milk, dairy or non-dairy
  • 2 tablespoon pumpkin puree
  • 2 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon pumpkin pie spice
  • Ice
  • ¼ cup cold concentrated coffee, or 2 shots of cold espresso
  • Whipped cream, topping

Instructions

  • In a small/medium pot, add the milk, pumpkin puree and sugar. Mix and heat on the stove. Remove right BEFORE it starts boiling. (you’ll start to see the steam coming off the milk)
  • Then add the vanilla extract and the pumpkin pie spice. Whisk until well combined.
  • Refrigerate until the mixture is completely cool – about 30 minutes. Pour the cooled milk in a glass or mug filled with ice and pour the coffee on top.
  • Then top with whipped cream and sprinkle some more pumpkin pie spice on top.
