Use your favorite brand of fudge brownie box mix. My family’s favorite is Betty Crocker but whatever brownie flavor you like will work to bake cookies.

A bowl of chocolate chips, two eggs in a holder, a bowl of vegetable oil, and a bowl of cocoa powder cake mix on a marble surface.
  • Boxed Brownie Mix: You will need a box of brownie mix to make cookies. You could also use a fudgy dark chocolate brownie mix if you want.
  • Oil: Oil will help to bring together the brownie cookie dough for chewy brownie cookies.
  • Chocolate Chips: Use your favorite chips, whether that’s dark, milk, white or semi sweet chocolate chips for these brownie cake cookies.

Recipe Variations and Substitutions for Brownie Cookies

This fudgy brownie cookies recipe is so easy to change up. I like to experiment with ingredients to make different varieties.

  • Fats: Substitute the oil with melted butter for a richer, more complex flavor of chewy chocolate cookies. Melt the butter, then let it cool slightly before mixing to avoid “cooking” the eggs in the batter.
  • Chocolate Chips: Use peanut butter chips, mint chips, caramel bits, or white chocolate chips for a flavor variation. For a textural contrast, press a large, soft Rolo or caramel into the center of the dough ball before baking.
  • Add-Ins: Fold in chopped walnuts, pecans, or toasted marshmallows (added at the end of the bake). For an intense coffee flavor, add 1/2 teaspoon of instant espresso powder to the dry mix.
  • Topping/Finish: Roll the dough balls in powdered sugar before baking for a classic “crinkle” cookie look. Press a Hershey’s Kiss into the center immediately after removing the cookies from the oven.

Special Equipment Needed for Fudgy Brownie Cookies

Most of this easy brownie recipe for cake mix brownie cookies uses everyday kitchen tools, a few items make the process go even easier.

  • Cookie Scoop (1.5 to 2 Tablespoons): This is highly recommended to ensure uniform cookies that bake evenly, which is critical for preventing the edges from burning in this easy recipe.
  • Parchment Paper or Silicone Mat: Essential for lining the baking sheet. These cookies are very moist and prone to sticking.

Prep Ahead Suggestions for Chocolate Cookies

Prepare box brownie mix cookies ahead to be able to bake and enjoy it whenever.

  • Make the Dough: Mix the dough completely, wrap it tightly in plastic wrap, and refrigerate for up to 4 days. The dough will be much easier to handle when cold.
  • Scoop and Freeze: Scoop the dough balls onto a baking sheet, freeze until solid, and then transfer the balls to a freezer-safe zip-top bag. Bake from frozen, adding 2-4 minutes to the total baking time.

Alternate Cooking Methods for Brownie Cookies

You can also make this recipe for chocolate cake mix cookies in the air fryer, especially if you have a small batch.

  • Air Fryer: Preheat the air fryer to 325°F (160°C). Place a few dough balls on a small parchment-lined air fryer safe pan or directly in the basket, ensuring they don’t crowd. Bake for 6-9 minutes, watching closely, until the tops look set and slightly cracked.

How to Store, Reheat and Use Leftovers

  • Storing: Store cooled Christmas cookies in an airtight container for up to 5 days. They stay exceptionally moist due to the mix.
  • Reheat: These are best served at room temperature, but if you want that fresh-out-of-the-oven warmth, microwave one for 5-10 seconds until the chocolate is slightly melted and gooey.
  • Use Leftovers: Use two cookies to sandwich a scoop of vanilla ice cream, coffee, or mint ice cream. Top it off with chocolate fudge.
    • Cookie Crumbles: Crumble the cookies and use them as a decadent crust for a no-bake cheesecake or as a topping for yogurt parfaits and sundaes.

Christina’s Notes

  • Recipe Can be Doubled: This is a great recipe to whip up for a cookie exchange.  Simply increase the box mix and wet ingredients proportionately and split the dough evenly onto two cookie sheets.
  • Decorating: These cookies would be even better if decorated with mini candies. M&M’s would be great on top of these baked cookies.
  • Icing: Topping these cookies with icing is also an idea. A raspberry buttercream frosting would be a refreshing touch on a chocolate loaded cookie.
  • Cookie Cutter: When making your favorite chewy chocolate cookie, try using different shaped cookie cutters. This is a fun way to get the kids involved and there is so many different cutters to chose from.
