Can you use other meat other?

I use boneless chicken breasts, alternatively, boneless chicken thighs would be great for this recipe. It will make them super tender and delicious. Just adjust your cooking time accordingly.

This recipe would also be great with pork too.

Ingredients
  

Garlic Lime Chicken

  • 1 clove garlic, minced
  • 1 tablespoon minced onion, minced
  • ¾ teaspoon cumin
  • ¾ teaspoon dried oregano
  • ½ teaspoon dried cilantro
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ cup orange juice
  • ¼ cup lime juice, about 1 medium lime
  • 2 tablespoon tablepoons olive oil
  • 2 pounds boneless, skinless chicken breasts

Pineapple Salsa

  • 2 cups pineapple, finely chopped
  • 1 tablespoon jalapeno, seeded and finely chopped
  • ½ cup finely chopped red bell pepper
  • cup finely chopped onion
  • ¼ tablespoon lime juice, about 1 medium lime
  • 4 tablespoons chopped fresh parsley
  • 2 teaspoons light brown sugar
  • ¼ cup orange juice

Instructions
 

Garlic Lime Chicken

  • Combine garlic, onion, cumin, oregano, cilantro, pepper, salt, orange juice, lime juice and olive oil in a zipper bag.
  • Shake the bag to combine the marinade ingredients.
  • Add chicken to the bag and shake to ensure the chicken is fully coated.
  • Refrigerate for 30-60 minutes.
  • Remove chicken from bag and discard marinade.
  • Preheat grill to medium high.
  • Grill chicken until internal temperature reaches 160 degrees, turning once.
  • Remove chicken from grill and cover with foil; allow to rest for 5 minutes.
  • Top with Pineapple Salsa.

Pineapple Salsa

  • Combine all ingredients in a medium bowl.
  • Cover and refrigerate until ready to use.
  • Serve on top of Garlic Lime Chicken.

  3. Hi. How much oj is used in the salsa recipe? You have 1/ so is it one or 1/2 or 1/4? Also you mention using the McCormick seasoning packet but then it is not listed in the recipe. This is your interpretation- yes? Thanks.
