These pecans are one of my favorite recipes to make during the holidays. I can’t remember where I got the recipe from, initially. I’ve been making them for years. In fact, we included this recipe in our first cookbook, “Hitchcock Family Favorites“.
Cinnamon Crusted Pecans

3 cups pecan halves
½ cup sugar
¼ cup water
1 teaspoon ground cinnamon
Dash of salt
Preheat oven to 350 degrees. Spread pecan halves on an un-greased cookie sheet. Bake at 350 degrees for 10 minutes, stirring after 5 minutes. Combine sugar, water, cinnamon and salt in a saucepan. Cook over medium-low heat until sugar dissolves, stirring often. Add pecans and cook for 3 minutes, stirring constantly. Remove from heat. Spread pecans on an un-greased cookie sheet. Bake at 300 degrees for 15 minutes, stirring every 5 minutes. Cool completely. Store in an air-tight container.

- You can use any nuts you have on hand…almonds, walnuts, cashews, etc.
Oh, did I mention that these are incredibly delicious? Something magical happens when you combine the buttery-ness of the pecans with the sweetness of the sugar and warmth of the cinnamon. It makes you feel all warm and cozy inside.
They are especially good when you eat them right out of the oven while they are still warm! But, don’t eat them all. Save some of the company!
Oh, and I’m curious…what’s the proper way to say pecan. Is it PEH-CAHN or PEE-CAN? I use both interchangeably.
