Andes Mint Chocolate Cookies are a combination of a chocolate covered sugar cookie and a rich Andes creme de menthe candy. These easy cookies are wonderful for Christmas or other holidays.

The holidays are a time for family, friends, and of course, food. One of the best things about the holiday season is all of the delicious cookies that come out of the oven. Andes Mint Cookies are a favorite among many, and for good reason. These soft and chewy chocolate cookies are topped with an Andes Mint that melts into the cookie, creating a divine chocolate mint frosting. The perfect cookies for the holiday season!

Ingredient Notes

  • Sugar Cookie Mix: This has all the dry ingredients in the package, flour, salt, baking soda etc. A refrigerated premade cookie dough can also be used.

  • Chips – Semi-sweet, dark or even white chocolate chips.
  • Low Sugar Mix – Try a low calorie cookie mix such as Good Dees Sugar Cookie Mix.
  • Melts: Replace the chocolate chips with chocolate melts.

How to Make Mint Christmas Cookies

These are the basic steps for making Andres Mint Cookies. Please refer to the recipe card below for more detailed instructions.

Making the cookie dough.

STEP 1: PREP

First, preheat the oven and prepare the baking sheet by adding parchment paper or a silicone cookie mat.

STEP 2: DOUGH

Prepare the cookie mixture according to package directions. Wrap in plastic wrap and chill for at least 15 minutes.

STEP 3: BAKE

Flatten one tablespoon of the chilled cookie dough into a disc. Place the mint candy in the center and wrap the dough around the candy until it’s completely covered with cookie dough. Place on a prepared baking sheet, 2 inches apart, and bake for 7-9 minutes, or until cookies are set.  Cool on a wire rack.

STEP 4: TOP

Meanwhile, melt the chocolate chips in a microwave, stir every 15 seconds. Drizzle the melted chocolate over the top of the cookies.

Ingredients

  • 17.5 ounces sugar cookie mix, Plus ingredients to make cookies
  • 45 Andes mint candies, unwrapped
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 375 degrees F.
  • Prepare the cookie mix according to package directions. Wrap in plastic wrap and chill for at least 15 minutes.
  • Flatten one tablespoon of the chilled cookie dough into a disc. Place the mint candy in the center and wrap the dough around the candy until it’s completely covered with cookie dough.
  • Place on a baking sheet, 2 inches apart, and bake for 7-9 minutes, or until cookies are set.
  • Allow to cook for 2 minuets before removing to a cooling rack to finish cooling.
  • While the cookies are cooling, melt the chocolate chips in the microwave, stirring every 15 seconds.
  • Drizzle melted chocolate over the tops of the cookies.
  • Pat a scant tablespoonful of dough in a thin layer around each mint candy. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 7-9 minutes or until set. Cool for 1 minute before removing from pans to wire racks to cool completely.
  • In a microwave-safe bowl, melt candy coating; stir until smooth. Drizzle over cookies.
