Ingredients
- 17.5 ounces sugar cookie mix, Plus ingredients to make cookies
- 45 Andes mint candies, unwrapped
- ½ cup chocolate chips
Instructions
- Preheat oven to 375 degrees F.
- Prepare the cookie mix according to package directions. Wrap in plastic wrap and chill for at least 15 minutes.
- Flatten one tablespoon of the chilled cookie dough into a disc. Place the mint candy in the center and wrap the dough around the candy until it’s completely covered with cookie dough.
- Place on a baking sheet, 2 inches apart, and bake for 7-9 minutes, or until cookies are set.
- Allow to cook for 2 minuets before removing to a cooling rack to finish cooling.
- While the cookies are cooling, melt the chocolate chips in the microwave, stirring every 15 seconds.
- Drizzle melted chocolate over the tops of the cookies.
- Pat a scant tablespoonful of dough in a thin layer around each mint candy. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 7-9 minutes or until set. Cool for 1 minute before removing from pans to wire racks to cool completely.
