What are Andes Mints?

Andes mints were an invention by Andrew “Andy” Kanelos, who opened a candy shop in 1921. The mints themselves were first released in the 1950s, and consist of a layer of creme de menthe, or mint creme, in between two layers of chocolate.

These easily-recognizable mints sport green foil wrappers, and are commonly eaten as after-dinner mints. Look for Andes chocolate mints easily at any grocery store.

  • Sugar Cookie Mix: This has all the dry ingredients in the package, such as flour, salt, and baking soda, baking powder etc. You can also use a refrigerated premade cookie dough.

Variations and Substitutions to Love these Andes Mint Cookies

These easy Andes mint cookies are easily adaptable. Here are some tips to help you put your own spin on them:

  • Bars: If you’d like, shape these cookies into chocolate bars.
  • Chocolate Chips: Add chocolate chips or melts into the dough.
  • Homemade Cookie Dough: Use homemade cookie dough instead of store bought mix.
  • Double Chocolate: Use a chocolate cookie dough to make cookies are soft and delicious.
  • Candy: If you can not find andes chocolate mints, then use andes pieces or thin mints to make andes cookies. Or melt andes mints on top. Mint Chocolate cookies are soft and chewy.
  • Mint Extract: Use a little peppermint extract to the cookie dough. These cookies are easy and the cookies are really good.

How to Make Andes Chocolate Mint Cookies

These mint cookies don’t take too long to make, and are perfect for the holiday season. These cookies are amazing.

These are the basic steps for making Andes chocolate mint cookies. Refer to the full, printable recipe card below for detailed instructions.

STEP 1: Prep

First, preheat oven and prepare the baking sheet by adding parchment paper or a silicone cookie mat.

STEP 2: Dough

Prepare the cookie mixture according to package directions. Wrap in plastic wrap and chill for at least 15 minutes.

STEP 3: Bake

Flatten one tablespoon of the chilled cookie dough into a disc. Press an Andes mint candy in the center and wrap the dough around the candy until it’s completely covered with cookie dough. Place on baking sheets with parchment paper or silicone baking mat, 2 inches apart, and bake for 7-9 minutes, or until cookies are set. Transfer cookies to a cooling rack. Store cooled cookies in an airtight container.

Step 4: Decorate the Mint Chocolate Chip Cookies

Meanwhile, melt the chocolate chips in a microwave. Stir every 15 seconds. Drizzle the melted chocolate over the top of the cookies.

  • Alternate cooking method tip: Bake the cookies in the air fryer. Cook at 350 degrees for 7 minutes. It won’t affect the texture or taste.

Ingredients

  • 17.5 ounces Sugar cookie mix, Plus ingredients to make cookies
  • 45 Andes mint candies, unwrapped
  • ½ cup Chocolate chips

Instructions

  • Preheat oven to 375 degrees F.
  • Prepare the cookie mix according to package directions. Wrap in plastic wrap and chill for at least 15 minutes.
  • Flatten one tablespoon of the chilled cookie dough into a disc. Place the mint candy in the center and wrap the dough around the candy until it’s completely covered with cookie dough.
  • Place on a baking sheet, 2 inches apart, and bake for 7-9 minutes, or until cookies are set.
  • Allow to cook for 2 minuets before removing to a cooling rack to finish cooling.
  • While the cookies are cooling, melt the chocolate chips in the microwave, stirring every 15 seconds.
  • Drizzle melted chocolate over the tops of the cookies.
  • Pat a scant tablespoonful of dough in a thin layer around each mint candy. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 7-9 minutes or until set. Cool for 1 minute before removing from pans to wire racks to cool completely.
  • In a microwave-safe bowl, melt candy coating; stir until smooth. Drizzle over cookies.
