  • Zucchini: You will need 2-3 zucchinis depending on their size, 2 medium or 3 small zucchinis.
  • Flour: For these Italian zucchini fritters, you will all purpose flour.
  • Egg: You will need 1 large egg for this recipe.
  • Baking Powder: Baking powder will help to these to get a crisp on the outside and soft on the inside.
  • Garlic: You can use garlic powder or fresh, I used even powder as it is easier to evenly incorporate.
  • Italian Seasoning: You can use a pre-made blend or use this recipe to make your Italian seasoning blend.
  • Red Pepper Flakes: If you like some spice, you can add some crushed red pepper flakes.

How to Make Italian Zucchini Fritters

These are the basic steps for making Air Fryer Zucchini Fritters. Please refer to the recipe card below for more detailed instructions.

STEP 1: SHRED ZUCCHINI

Using a box grater to grate zucchini and then using a cheesecloth or clean kitchen towel squeeze out any excess liquid and as much moisture to get them as dry as possible.

STEP 2: MAKE THE FRITTERS

To a large mixing bowl, add shredded zucchini, all purpose flour, salt, garlic powder, egg, baking powder, Italian seasoning, and chili flakes. Mix until fully combined and then form into small patties, there should be about 9-10 fritters in total.

STEP 3: AIR FRY THE ZUCCHINI FRITTERS

Spritz cooking spray or brush over some oil on each fritter then air fry for 10 minutes, flipping halfway to ensure they cook evenly. You will know when they are done as you will get these golden-brown crispy zucchini fritters and serve immediately.

Ingredients

  • 2 zucchini
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon chili flakes
  • cup all-purpose flour

Instructions

  • Shred zucchinis and squeeze out excess water using cheesecloth.
  • Take the shredded zucchini in a bowl and add egg, salt, baking powder, garlic powder, Italian seasoning, chili flakes, and all-purpose flour. Toss and mix everything.
  • Make small size (around 9-10) patties out of the zucchini mixture.
  • Preheat the air fryer for 5 minutes at 350 F / 180 C. Place the patties in the air fryer basket and brush some oil on top.
  • Air fry the patties for 10 minutes. Flip and then cook for another 5 minutes or until lightly brown.
  • Serve hot and enjoy.
