One way you can make this recipe even easier is to prepare the ingredients ahead of time and freeze them in a freezer bag.  Then, on busy days, you simply need to take a bag from the freezer, thaw it overnight and place it in the slow cooker in the morning.  When you come home, dinner is ready.  I love easy.  Easy makes me happy.

Freezer meals can be a real time saver.  Here are some tips to make sure your freezer is functioning efficiently:

  • Keep your freezer as full as possible.  Unlike your refrigerator, freezers are most efficient when they are full.
  • Use a thermometer to check the temperature.  Freezers should be kept between zero and five degrees.  If it’s too cold, you’re wasting energy.  If it’s too warm, you can risk spoiling your food.
  • Checks for leaky door seals with a dollar bill.  Close the door on a dollar bill.  If the bill stays in place, you have a good seal.  If it slides down or moves easily, it’s time to clean or replace the door gasket.

Ingredients

  • 2 pounds chicken breasts, boneless and skinless
  • 1 cup salsa
  • 1 cup petite diced tomatoes, drained
  • 1 cup chicken broth
  • 2 tablespoons taco seasoning
  • 1 cup onion, diced
  • ½ cup celery diced
  • ½ cup carrots, shredded
  • 3 tablespoons sour cream, reduced fat
  • 1 cup black beans, rinsed
  • 2 green onions, chopped

Instructions

  • Place the chicken in slow cooker.
  • Sprinkle the taco seasoning over the meat then layer the vegetables and salsa on top.
  • Pour soup base over the mixture, set on low and cook for 6-8 hours.
  • The meat is cooked when it reaches an internal temperature of 165°F.
  • Remove the meat from the slow cooker and shred with two forks.
  • Add the chicken back into the slow cooker and stir in the sour cream and black beans.
  • Return lid to slow cooker and cook for 5-10 minutes, or until everything is heated through.
  • Top with green onions before serving.
