  • Strawberry Flavor Cake Mix: I prefer to use a strawberry cake mix for this recipe, but you could also use white or vanilla.
  • Cream Cheese: Softened cream cheese is best for making a no-bake truffle dough.
  • Melting Chocolate: You will need both vanilla melting wafers and bright pink candy melts.

Truffle recipes are super customizable. Plus these truffles are easy and the truffles taste amazing. Take this one to the next level by adding different mix-ins and toppings.

  • The Boozy Kick: Add 1 Tablespoon of Grand Marnier or strawberry liqueur to the ganache.
  • Coating: Make these strawberry truffles a pink color by using different color melts. Mix up the types of chocolate. Try to use dark chocolate coating.
  • Vegan Version: Use full-fat coconut cream (the solid part) and dairy-free white chocolate chips.
  • Flavoring: You can replace the strawberries with raspberries instead.
  • Nutty Crunch: Roll the finished truffles in crushed pistachios or toasted almond slivers.
  • Topping: If you cant find pink candy melts, you can melt milk chocolate instead. You could also top with freeze dried strawberries or freeze dried raspberries. You could also make a powdered sugar glaze instead.

  • Food Processor: Essential for turning freeze-dried berries into a fine dust.  
  • Small Cookie Scoop (1 teaspoon size): This keeps your hands clean and ensures every truffle is uniform.
  • Parchment Paper: Chocolate sticks to everything except this. Make sure to use a lined baking sheet.

How to Make Chocolate Strawberry Truffles

This is one of the easiest recipes ever. It comes together in just a few steps, and is perfect for treat boxes and get-togethers.

Four-step process: flour on a tray (1), cream cheese mixture in a bowl (2), Strawberry Truffles added to the mixture with ground meat (3), and the mixture combined with chopped onions (4).
  • Heat Treat Cake Mix: Preheat the oven and line a baking sheet with parchment paper. Spread the cake mix in an even layer on the baking sheet lined with parchment paper and bake for 5 minutes. Allow pan to cool on a wire rack.
  • Make Strawberry Filling: In a mixing bowl, beat together the softened cream cheese with a mixer until smooth. Fold the cake mix into the cream cheese before mixing it with the mixer. Fold in cream cheese chips, cover and chill.
  • Shape Truffle Balls: When cold, scoop 1.5 Tablespoons of dough into your hands and roll each ball. Place dough balls on the baking sheet.

  • Coat in Chocolate: Melt chocolate in a small bowl that is microwave-safe the microwave, stirring every 30 seconds. Coat each truffle ball in the melted chocolate and use a fork to help excess chocolate drip off before placing down.
  • Add Toppings: Add sprinkles before chocolate sets. Melt the pink candy melts and transfer to a piping bag. Drizzle the pink chocolate onto the tops of all the truffles. Refrigerate until firm.

  • Prep Ahead: You can make the dough 2–3 days in advance. Just keep it in the fridge.

Alternate Cooking Methods to Melt the Chocolate

Alternatively, you can prepare the chocolate in the crock pot.

  • Slow Cooker: Melt the chocolate in the slow cooker. Fill it halfway with water and place on Low to slowly melt the chocolate for the chocolate shell.

How to Store, Reheat and Use Leftovers

  • Store: Store truffles in an airtight container. Be sure to keep truffles in the fridge.
  • Freeze: The strawberry chocolate truffles freeze beautifully! Flash-freeze them on a tray first, then toss them into a freezer bag for up to 3 months.
  • Using Leftovers: If you have extra filling, melt it down and use it as a decadent dip for pretzels or a topping for vanilla ice cream.

Ingredients
  

  • 15.25 ounces Strawberry cake mix , 1 box
  • 8 ounces Cream cheese, 1 brick, softened
  • cup Cream cheese chips, roughly chopped
  • 20 ounces Vanilla melting wafers, 2 bags
  • ½ cup Pink candy melts
  • ½ cup Bright pink candy melts
  • Sprinkles, optional

Instructions
 

  • Preheat the oven to 350°F and use parchment paper to line a baking sheet.
  • Spread the cake mix in an evenly layer onto the prepared baking sheet and bake for 5 minutes to kill an bacteria. Remove from the oven and allow pan to cool on a wire rack.
  • In a mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until it has a creamy and smooth consistency.
  • Now add in the prepared cake mix, fold into the cream cheese with a rubber spatula. Before using a hand mixer to prevent it flying everywhere.
  • Then fold in the cream cheese chips until incorporated.
  • Refrigerate covered with plastic wrap for 2 hours.
  • Now that the dough had chill and is easier to work with, scoop 1 ½ Tablespoons and roll into an ball with your hands, then place of the baking sheet.
  • Melt the chocolate either in using a double boiler or in the microwave for 30 second intervals until melted.
  • Now coat each truffle one at a time in the melted chocolate, the use a fork to allow the excess chocolate drip off before place back on baking sheet. Then sprinkle over your sprinkles of choice.
  • Next melt the pink candy melts and transfer to piping bags once melted.
  • Then drizzle the pink chocolate on top of the truffles.

Christina’s Notes

  • Baking Cake Mix: Don’t skip this step, as cake mix contains raw flour it can contain harmful bacteria. Baking in the oven on a sheet pan will kill all of the bacteria for this no bake dessert.
  • Double Boiler: To melt the chocolate it is best to use a double boiler so that all of it melt evenly and there is not risk of burning. Watch this video tutorial on how to use a double boiler to melt chocolate.
  • Microwave: You can also heat treat the cake mix in the microwave instead of oven. Heat in a microwave safe bowl for 3 minutes, stirring the cake mix every 30 seconds to ensure it is evenly heated and to avoid any hot spots.
