Ingredient Notes

  • Cream Cheese Chips: If you can find cream cheese or cheesecake flavored chocolate chips that is what you’ll want to use. If not regular white chocolate chips work too.
  • Cake Mix: In this recipe, Betty Crocker strawberry cake mix was used but any brand will work just fine.

Variations and Substitutions

  • Freeze Dried Strawberries – Use crushed freeze-dried strawberries or strawberry powder to top cheese cake truffles in place of sprinkles for an extra kick of strawberry.
  • Food Coloring – You can also make your own pink chocolate by using red or pink food dye to the melted white chocolate.
  • Extracts – For more flavor you can add strawberry or vanilla extract to the melted chocolate.
  • Chocolate – For more of a chocolate covered strawberry truffle, dip in milk, semi-sweet or dark chocolate.

How to Make Strawberry Cake Truffles

STEP 1: BAKE CAKE MIX

Before you start, preheat the oven to 350°F and use parchment paper to line a baking sheet. You will need to heat treat the cake mix to get rid of any bacteria before starting. Bake for 5 minutes and allow to cool.

STEP 2: MAKE TRUFFLES

In a mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until it has a creamy and smooth consistency. Then add in the cake mix, stir into the cream cheese with a rubber spatula. Fold in the cream cheese chips until incorporated.

STEP 3: REFRIGERATE

Place in the refrigerator covered with plastic wrap for 2 hours. Then scoop 1 ½  tablespoon of the mixture and roll into an ball with your hands, then place of the baking sheet.

STEP 4: MELT CHOCOLATE

Melt the chocolate ganache either in a double boiler over medium heat or in the microwave for 30 second intervals until melted. If needed, add coconut oil to the chocolate to make it smoother. Now dip each truffle one at a time in the melted chocolate, the use a fork to allow the excess chocolate drip off before place back on baking sheet. Then sprinkle over your sprinkles of choice.

STEP 5: PINK DRIZZLE

Next melt the pink candy melts and transfer to piping bags once melted. Then drizzle the pink chocolate on top of the truffles. Allow chocolate drizzle to set completely.

  • 15.25 ounce 1 strawberry cake mix , 1 Box of cake mix
  • 8 ounces cream cheese, softened to room temperature
  • cup cream cheese chips, roughly chopped
  • 20 ounces vanilla melting wafers, 2 bags
  • ½ cup pink candy melts
  • ½ cup bright pink candy melts
  • Sprinkles, optional
