Ingredient Notes

  • Box Cookie Mix: For the packaged sugar cookie mix, you can use whichever kind you prefer. Betty Crocker’s sugar cookie mix is a great option for this recipe. It has all your dry ingredients.
  • Food Coloring: For a more bright, vibrant pink color, you can add a few drops of pink or red food coloring into the dough before baking. I prefer to use gel food coloring because it makes a more vibrant color.
  • Freeze Dried Strawberries – these are a must for this recipe. It’s what provides that nostalgic strawberry crunch.

See my recipe card below for a complete list of the ingredients with measurements.

Variations and Substitutions

  • Mix variation – Instead of using a sugar cookie box mix, you can swap that for a strawberry cake mix for a more intense strawberry flavor.
  • Icing variation– For a smoother consistency and vanilla flavor, you can add a few tablespoons of vanilla pudding to your frosting. A cream cheese frosting would also be a great option for these strawberry crunch cookies.
  • Cooking variation – If you like your cookies to have a crispy exterior, you can try baking your treat in an air fryer.
