Air Fryer Beef Roast turns a well-marbled cut into a tender, juicy dinner in about 30 minutes. A quick sear in butter after air frying locks in the flavor. If you love your air fryer as much as I love mine, you should try my Air Fryer Pizza Margherita or Air Fryer Pizookie.

Why this Recipe is a Keeper
This roast comes together faster than the oven version without sacrificing tenderness. Here’s why it’s worth keeping for busy weeknights.
- 30-Minute Meal: This roast goes from raw to rested in about half an hour.
- Just 3 Ingredients: Beef, seasoning, and butter are all this recipe needs.
- Family Friendly: Tender, juicy beef with a flavorful crust is an easy sell for everyone.
- Versatile: Pairs well with almost any side dish you already have planned.
Will the Roast Turn Out Tender in the Air Fryer?
Yes, the air fryer’s circulating hot air cooks the roast evenly while helping it retain its natural juices. This gives you a tender result without much hands-on effort.
A meat thermometer is the best way to guarantee that tenderness, since pulling the roast at the right temperature matters more than the clock. Check the thickest part of the roast for an accurate reading.
Pro Tip
Air fryers aren’t great at browning on their own. A quick sear in a hot skillet after air frying gives the roast that golden-brown crust without drying out the inside.
Ingredient Notes
A couple of ingredient choices make a real difference here.
This is an overview of key ingredients. Get the full printable recipe with specific measurements and directions in the recipe card below.
- Beef Loin Roast: Look for a well-marbled cut, ideally one that’s pre-marinated in beef stock for extra flavor and tenderness.
- Steak Seasoning: A bold blend like Montreal steak seasoning adds flavor without needing extra spices.
Variations and Substitutions
This recipe works well with a few different cuts and methods.
➡️ Try a Different Cut: Ribeye, sirloin, or beef tenderloin all work in place of beef loin.
➡️ Add Fresh Herbs: Rosemary, thyme, or extra garlic powder add a different flavor profile.
➡️ Cook on the Stovetop: No air fryer? Cook this roast in a skillet on the stove instead, building a pan gravy as you go.
➡️ Make a Gravy: Add a splash of beef broth to the air fryer basket while cooking to create a simple gravy.
How to Make the Recipe
These are just highlights. Get the full printable recipe with specific measurements and directions in the recipe card below.
- Season the roast with steak seasoning.
- Air Fry until just below your desired doneness.
- Sear the roast in butter for a golden crust.
- Rest before slicing and serving.
Prep Ahead and Short Cut Tips
A little prep ahead makes dinner come together faster.
➡️ Season Ahead: Coat the roast in seasoning the night before and let it sit in the fridge.
➡️ Buy Pre-Marinated: A roast that’s already marinated in beef stock saves a step and adds flavor.
➡️ Prep the Sides While it Cooks: Use the air fryer time to get side dishes ready at the same time.
Alternate Cooking Methods
No air fryer? Cook this roast on the stovetop instead.
- Stovetop: Sear and cook the roast in a skillet over medium heat, building a pan gravy with the drippings as it cooks.
Can I Brown the Roast in the Air Fryer?
Air fryers aren’t the best tool for deep browning, though it can be done. A light spray of cooking oil on the roast before air frying helps it brown more.
For the best crust, a quick sear in a hot skillet after air frying still works better. That extra step only takes about two minutes per side.
How to Store, Reheat and Use Leftovers
- Storing: Let the roast cool completely, then store it in an airtight container or wrapped tightly in plastic wrap in the fridge for three to four days
- Reheating: Warm slices in a skillet over low heat, or in the microwave in short bursts to avoid drying out the meat.
- Using Leftovers: Slice leftover roast for sandwiches. Or serve it alongside Air Fryer Steak Bites for a beef-forward dinner.
Expert Tips for Making This Recipe
➡️ Try Different Seasonings: Rosemary, thyme, or garlic powder all work well in place of or alongside steak seasoning.
➡️ Use a Liner for Easy Cleanup: Air fryer basket liners cut down on cleanup time significantly.
➡️ Make a Quick Gravy: A splash of beef broth in the basket while cooking gives you a simple pan sauce.
➡️ Slice Against the Grain: This makes every bite more tender, no matter which cut you use.

Christina’s Notes
-
- Cook to 5 Degrees Below Target: The roast continues cooking while it sears and rests, so pull it slightly under your desired doneness.
- Use a Meat Thermometer: This is the most reliable way to hit your preferred level of doneness every time.
- Don’t Skip the Rest: Resting for 10 minutes lets the juices redistribute instead of spilling out when you slice.
- Cool Completely Before Storing: Let the roast cool before refrigerating so it stays food-safe for 3 to 4 days.
- Scale the recipe: Simply adjust the serving size in the recipe card and the ingredients will update automatically.
- Make your own All Purpose Seasoning: When a recipe calls for All Purpose Seasoning, you can use my homemade All Purpose Seasoning recipe or substitute salt and pepper to taste.
- Meat doneness: I always use a meat thermometer to test for doneness when cooking meat.
- Use unsalted butter: I use unsalted butter so I can control the salt level in the recipe.
- Preheat the oven: Unless otherwise noted, always preheat your oven before baking.
