My favorite salad of all time is the Cobb Salad at Brixx Grille and Tavern in Scranton!  The other night for dinner, I was craving this salad but couldn’t run out and pick one up.  Fortunately, I had most of the ingredients on hand so I tried to re-create it at home. 

Instead of the ranch dressing that I usually get at Brixx (which I think is a combination of Ranch and Bleu Cheese), I decided to try something a little different — a Southwestern Ranch.  After playing around with the measurements for a bit, I finally landed on a mixture that I really liked!

The Recipe

2 cups chopped lettuce
1 cup diced, marinated boneless, skinless chicken breast
1/4 cup shredded cheddar cheese
1/4 cup chopped cucumber
1/4 cup chopped tomato (seeded)
1 cup fat free ranch salad dressing
1/2 tsp taco seasoning

Assemble vegetables, chicken and cheese on a large plate. Mix together ranch dressing and taco seasoning until combined.  Serve dressing on the side.

Is it a keeper?

This recipe was totally delish!  The dressing had just enough kick and the salad was very satisfying!  Next time, I think I’ll add some hard boiled egg to the salad.

    this salad looks hearty and super delish. I think I would have mine without fat free Ranch. Not a big fan of fat free dressing. So happy to find your blog on pinterest and to now me your newest follower. If you have a chance check out my blog.
