Why this Slow Cooker Kielbasa Recipe is a Keeper

I love this smoked polish sausage dinner recipe because it’s the perfect appetizer or snack to serve for New Years or for game day. The sausage bites are so delicious and super easy to make.

  • Minimal Effort: It takes about 5 minutes of prep. No chopping (unless you count slicing the sausage) and no sautéing. It’s truly a set it and forget it sausage recipe.
  • Flavor Punch: The slow-simmering process allows the sugars in the sauce to caramelize and penetrate the meat.
  • Pantry Staples: Most versions use ingredients you likely already have in your door shelf or pantry.

Easy recipes for kielbasa are super customizable. Take this one to the next level by adding veggies, different protein or a different crunchy topping.

  • The Meat: Swap kielbasa for Lil’ Smokies (cocktail sausages), meatballs, or even thick-cut chunks of ham.
  • The Heat: If the “spicy” part isn’t hitting hard enough, add a teaspoon of red pepper flakes or a tablespoon of Sriracha.
  • The Sweet: If you’re out of brown sugar, use honey, maple syrup, or even grape jelly (a classic “old school” party meatball trick).

Special Equipment Needed for Smoked Sausage Appetizer

Although there aren’t any fancy tools needed to make this recipe, a couple things are useful to keep it from being too messy.

  • Slow Cooker (Crock Pot): A 3-quart size is usually perfect for a standard batch, but a 6-quart works if you’re doubling it.
  • Slow Cooker Liners: Totally optional, but they make the sticky cleanup non-existent.
  • Toothpicks: Essential for serving so guests don’t have to use their fingers.

The best way to cook kielbasa is in a crock pot, but here’s how to switch it up if your slow cookers are busy making something else.

Store, Reheat and Use Leftovers Crock-Pot Kielbasa

  • Store: Keep leftover kielbasa in an airtight container in the fridge for up to 4 days.
  • Reheat: Use the microwave for 30-second bursts, or put them back in a small saucepan over low heat with a splash of water to loosen the glaze on the polska kielbasa.
  • Use Leftovers: Chop up the leftovers and stir them into a box of mac and cheese or serve them over white rice with diced veggies for a quick lunch.

Common Questions About This Crockpot Kielbasa Bites

How Do I Keep the Bites from Burning on the Edges?

Be sure to stir this easy appetizer every so often to make sure that the beef kielbasa bites don’t get too dark.

My Sauce is Too Oily, What Happened?

If your sauce is too oily it may have cooked for too long on too high of heat. Cook time will decrease with higher heat.

Can I Use Another Type of Sausage?

Of course you can use what you have for this recipe, try a smoked sausage (beef, pork, or mixed), Andouille sausage (spicier, smoky, great for bold flavor) or a Polish sausage (very close in taste and texture).

A plate of meat in a glossy brown sauce, garnished with chopped herbs, sits on a brown dish atop a woven placemat with a red and white napkin underneath.

Expert Tips for Making this Slow Cooker Meal

  • The “Sear” Secret: If you have an extra 5 minutes, brown the kielbasa slices in a pan before putting them in the crock pot. The Maillard reaction adds a deeper, savory flavor.
  • Don’t Overcook: Even though it’s a crock-pot, sausages can get “mushy” if left on high for 8 hours. Stick to 2-3 hours on High or 4-5 hours on Low.
  • Cornstarch Slurry: If your sauce looks too thin at the end, whisk 1 teaspoon of cornstarch with 1 teaspoon of water, stir it in, and let it cook on High for another 15 minutes to thicken it into a true glaze.
  • BBQ Sauce: Make it more of barbecue sauce by adding in some of your favorite. This will make it slightly sweeter and smokier.
  • Serve With: Serve slow cooker kielbasa with Honey BBQ Wings or Ranch Spicy Crackers.

Ingredients

  • cup Honey
  • cup Ketchup
  • 1 cup Brown sugar
  • 2 Tablespoons Dijon mustard
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cayenne pepper
  • 2 Tablespoons Apple cider vinegar
  • 2 pounds Kielbasa sausage

Instructions

  • To a medium sized bowl add the honey, ketchup, brown sugar, Dijon, seasonings and apple cider vinegar and stir. Cut the kielbasa into 1 inch slices.
  • Add the sliced kielbasa to an 8 quart slow cooker and then add the sauce on top. Stir until the sauce is coated all over.
  • Put the lid on and cook for 3-4 hours on low, stirring every once in a while. Transfer to a pretty bowl, sprinkle with parsley (optional) and serve with toothpicks as an appetizer or over rice for dinner!

Christina’s Notes

  • Brown the kielbasa first for deeper flavor: A quick 3–4 minute sear in a skillet caramelizes the edges and adds a smoky, savory depth you just can’t get from slow cooking alone. It also helps the glaze cling better.
  •  Layer the sauce under the kielbasa: Put your sauce mixture (BBQ, brown sugar, mustard, jelly, etc.) in the bottom of the slow cooker first. Then add the kielbasa on top. This prevents scorching and helps the sauce heat evenly.
  • Use LOW heat for the best texture: Kielbasa is already cooked, so you’re not “cooking”—you’re warming and glazing. Low for 2–3 hours gives you tender bites and a thick, glossy sauce. High heat can make the sugars burn or the sausage toughen.
  • Thicken the sauce at the end if needed: If the glaze looks thin:
    • Remove the lid for the last 20–30 minutes Or stir in a teaspoon of cornstarch mixed with a splash of water. This gives you that sticky, party‑perfect finish.
