  • Boneless Chicken Breasts – Cut into chunks.
  • Italian Seasoning Mix (or Kosher Salt and Black Pepper to taste)
  • Olive Oil
  • Onion – finely chopped
  • Garlic, finely minced– The jar kind is fine.
  • Roasted Red Peppers, chopped – Again, the jar kind is fine to use for this dish or use green pepper if you have it on hand.
  • Petite Diced Tomatoes – 1 can with the juice.
  • White Wine– Always use a wine that you would lie to drink yourself.
  • Chicken Broth – Homemade or store bought from the carton or can.
  • Mushrooms – By them pre-sliced in the produce section.
  • Cooked Fettuccine – Follow the package directions and cook it in advance or when the chicken is cooking.

How to Make Chicken Cacciatore Recipe

These are the basic steps for making Chicken Cacciatore. Please refer to the recipe card below for more detailed instructions.

Breading and preparing the chicken.

STEP 1: PREP

First, cut chicken into 1 inch pieces. Stir together flour,Italian Seasoning Mix. Dredge chicken pieces in flour mixture. Over medium-high heat, heat 4 tablespoons olive oil in a large skillet with deep sides. Cook tender chicken until brown on all sides.

STEP 2: SAUTE

Remove chicken pieces from pan with a slotted spoon. Reduce to medium heat and add remaining olive oil to hot skillet. Cook onions, garlic and peppers until soft. 

STEP 3: SIMMER AND SERVE

Next, add remaining ingredients, white wine and reduce by ½ and then add tomatoes, mushrooms, broth and cooked chicken. Simmer for 10-15 minutes with lid on. Finally, serve over pasta (top with fresh grated parmesan cheese).
