Over medium-high heat, heat 4 tablespoons of olive oil in a large skillet with deep sides. Cook chicken until brown on all sides, or for 3-4 minutes per side, then remove the chicken pieces from the pan. Transfer chicken to a plate and set aside.
2. Sautee the Vegetables and Place the Chicken Back in Pan
Turn the heat to medium and add remaining olive oil to hot skillet. Sauté onion, pepper, and garlic; cook until soft. Stir to combine. Pour in the wine and reduce by ½. Then, add the mushrooms, tomatoes, and chicken broth. Return the chicken to the pan.

- 2 pounds Chicken Breast, boneless and skinless
- ½ cup Flour
- 1 teaspoon Italian Seasoning
- 8 tablespoons Olive Oil
- 1 Medium Onion, finely diced
- 3-4 cloves Garlic, finely minced
- 4 Roasted Red Peppers, chopped
- 1 can Diced Tomatoes, 14.5 ounces
- 1 cup White Wine
- 1 cup Chicken Broth
- 10 oz Mushrooms, sliced
- 1 pound Fettuccine, cooked
Instructions
- Cut chicken into 1 inch pieces. Stir together flour, salt and pepper.
- Dredge chicken pieces in flour mixture.
