Slow Cooker Pulled Pork Tacos {What the Fork Copy Cat Recipe}

These Slow Cooker Pulled Pork Tacos are a copy cat of one of my favorite food truck recipes.  They are so full of flavor and texture!

A few months ago, one of our area food trucks, What the Fork, came in second place in Live with Kelly and Michael’s Truckin’ Amazing Cook Off contest.  Their amazing Pulled Pork Tacos with Sriracha Slaw, Sweet Potato Straws and Candy Sauce impressed the pants off of Kelly Ripa and Michael Strahan.

And, rightfully so.  They are to die for!  What the Fork makes so many amazing things, but these tacos are my absolute favorite. What the Fork owner, Mario and Katie have created something magical with these tacos.

There is so much going on.  You have juicy, slow cooked pulled pork, a soft taco shell, zesty sriracha slaw and sweet candy sauce.  These tacos are just layer upon layer of flavor and texture.  What’s not to love?!

Ever since I had my first bite of these tacos, I knew I had to recreate them.  The recipe below was adapted from the one posted on Kelly and Michael’s website.  I used my own slow cooker pulled pork recipe since I love the spice rub and it’s easy to make.  Plus, I also used my own Sriracha Slaw recipe.  Again, I loved the flavor of mine.

When I made them, I made everything except for the sweet potato straws.  I don’t know why I left them out.  I just did.  Don’t do what I did.  Make the straws.  You’ll thank me later.

Slow Cooker Pulled Pork Tacos {What the Fork Copy Cat Recipe}

Adapted from Live with Kelly & Michael Truckin’ Amazing Cook-Off: What the Fork Pulled Pork Tacos

Slow Cooker Pulled Pork (see recipe below)
Sriracha Cole Slaw
Candy Sauce (see recipe below)
Sweet Potato Straws (see recipe below)
8-6 inch flour soft taco shells

Prepare each of the components above and set aside.  Lay each taco shell on a flat surface.  Place 1/4 cup of Sriracha Slaw in the center of each shell.  Place 4 oz of pulled pork on top of slaw.  Drizzle 2 oz of candy sauce on top of pork.  Top with sweet potato straws.  Fold tacos in half and serve immediately.

Pulled Pork:
2 Tbsp dark brown sugar
1 tsp paprika
1 tsp chili powder
3/4 tsp ground cumin
1/2 tsp ground chipotle chili pepper
1/4 tsp ground ginger
1/2 tsp salt
1-7 pound bone-in pork butt
Spice rub (recipe below)
5 cups beef broth
1 Tbsp apple cider vinegar

Mix first 7 ingredients together in a small bowl.  Rub entire roast with spice rub and place fat side up in slow cooker.  Pour beef broth into slow cooker and add vinegar.  Cover and cook on high for 7-8 hours or until meat falls off the bone.

Remove pork from slow cooker and place on a large rimmed baking sheet.  Using two forks, shred pork, removing excess fat and bone.

Candy Sauce:
1-8.5 oz can peaches in heavy syrup, drained
1/4 cup barbeque sauce
1 1/2 tsp fresh ginger, grated
2 tsp brown sugar

Puree all ingredients together in a food processor.  Refrigerate overnight.

Sweet Potato Straws:
1 sweet potato, julienned with skin left onOil for frying

Heat oil to 300 degrees.  Fry sweet potato straws for 8 minutes.  Increase heat to 375 degrees and cook for an additional 30 seconds or until crunchy.  Drain on paper towels and salt to taste.
