1. Make Pork Rub
Mix the rub ingredients together in a small bowl. Season the pork with the rub you made and place fat side up in the bottom of the slow cooker.
2. Cook the Pork
Pour beef broth into a slow cooker and add vinegar. Cover and cook on high for 7-8 hours or until meat falls off the bone. Remove the pork from slow cooker and transfer the pork to a baking sheet with sides.
Using two forks, shred the pork and remove excess fat and bone.
3. Make BBQ Sauce
Make the BBQ Sauce by pureeing drained peaches, barbeque sauce, fresh grated ginger and brown sugar together in a food processor.
4. Assemble your Tacos
Lay each taco shell on a flat surface. Add the pork in the center of the taco shell. Drizzle the peach BBQ sauce on top of pork generously. Place a little coleslaw on top of the pork, then fold and serve.

- 2 tablespoons Dark brown sugar
- 1 teaspoon Paprika
- 1 teaspoon Chili powder
- ¾ teaspoon Ground cumin
- ½ teaspoon Ground chipotle chili pepper
- ½ teaspoon Salt
- ¼ teaspoon Ground ginger
PORK
- 7 pounds Bone-in pork butt
- 5 cups Beef broth
- 1 tablespoon Apple cider vinegar
PEACH BBQ SAUCE
- 8½ ounces Peaches in heavy syrup, drained
- ¼ cup Barbeque sauce
- 1½ teaspoons Fresh ginger, grated
- 2 teaspoons Brown sugar
TACOS
- 8 Flour soft taco shells
- 2 cups Prepared coleslaw
Instructions
- Mix the rub ingredients together in a small bowl. Rub the entire roast with spice rub and place fat side up in the slow cooker.
- Pour beef broth into a slow cooker and add vinegar.
- Cover and cook on high for 7-8 hours or until meat falls off the bone.
