1. Cook the Veggies
Dice the onions and bell peppers and add them to a large skillet. Season with the chicken fajita seasoning. Sauté the bell peppers and onion until soft.

- 3-4 Chicken breasts
- ¼ Onion
- ¼ Red bell pepper
- ¼ Yellow bell pepper
- ¼ Orange bell pepper
- ¼ Green bell pepper
- 4 ounces Cream cheese, softened
- 1 cup Mozzarella, shredded
- 1 cup Mexican blend cheeses, shredded
- 4 teaspoons Fajita seasoning
- 3 tablespoons Olive oil
Instructions
- Dice onions and pepper. Add the onions and peppers to the frying pan. Season with the fajita seasoning.
- Sauté the onions and veggies until soft. Remove from the pan and add to a bowl with the cream cheese and shredded cheeses.
- Mix thoroughly. If the cream cheese doesn’t melt fully, microwave for about 45 seconds.
- Slice the chicken breasts along the side, season chicken on the outside and inside of the cut.
- Add this mixture to the inside of the chicken breasts.
- Place the stuffed breasts back to the same pan (adding more oil if necessary).
- Cover and cook for 10-12 mins on one side on medium heat.
- Flip over breasts and cover. Cook for an additional 10-15 min or until the meat is fully cooked through, it should have an internal temperature of at least 165 degree.
