How to Make Stuffed Chicken Breast – Step by Step

!st picture is the vegetable mixture, second is the vegetables after cooking.
  • Vegetables:  First, slice onions and peppers and then add to the frying pan. Season with seasoning. Saute with olive oil until soft.
  • Cheese: Second, add vegetables into small bowl along with cheese and mix.
  • Chicken: Third, slice the chicken breasts along the side, season chicken and next stuff chicken with mixture.
  • Cook: Next, return to pan and cook for 10 to 12 minutes per side or until internal temperature reaches 165 degrees
  • Cool: Finally, remove from heat and let stand for 5-6 mins before slicing.

CAN I BAKE THIS RECIPE?

Indeed, if you like you can saute your vegetables, brown your chicken and then bake at 350 degrees for about twenty minutes. This recipe would be great for the air fryer or the grill as well.

WHEN IS THE CHICKEN DONE?

The use of a meat thermometer is a must for cooking any meat properly. They are inexpensive and keep meat from being over or under done. If one isn’t available prick with a fork and see if the juices run clear.

SUBSTITUTE DIFFERENT PEPPERS?

Of course, I like using tri-colored pepper but you can use whatever you have on hand.

HOW DO I KEEP THE FILLING IN?

The key here is not to handle the meat too much. Therefore, i suggest letting rest for the full time required on each side without moving it in the pan. Also, a toothpick helps as well.

SIZE OF THE BREAST?

Large breasts are used in this recipe, they hold more of the delicious filling. Additionally, a thin breast will cook quicker, so pound thinner if necessary.

Ingredients

  • 3-4 large chicken breasts
  • 1/4 onion
  • 1/4 red bell pepper
  • 1/4 yellow bell pepper
  • 1/4 orange bell pepper
  • 1/4 green bell pepper
  • 4 oz cream cheese softened
  • 1 cup mozzarella shredded
  • 1 cup Mexican blend cheeses shredded
  • 4 tsp fajita seasoning
  • 3 tbsp olive oil

Instructions

  • Dice onions and pepper. Add the onions and peppers to the frying pan. Season with the fajita seasoning.
  • Sauté the onions and veggies until soft. Remove from the pan and add to a bowl with the cream cheese and shredded cheeses.
  • Mix thoroughly. If the cream cheese doesn’t melt fully, microwave for about 45 seconds.
  • Slice the chicken breasts along the side, season chicken on the outside and inside of the cut.
  • Add this mixture to the inside of the chicken breasts.
  • Place the stuffed breasts back to the same pan (adding more oil if necessary).
  • Cover and cook for 10-12 mins on one side on medium heat.
  • Flip over breasts and cover. Cook for an additional 10-15 min or until the meat is fully cooked through, it should have an internal temperature of at least 165 degree.
  • Remove from heat and let stand for 5-6 mins before slicing and serving.
