  • Chicken: For these chicken chipotle kabobs, you will need 1.5 pounds of chicken tenderloins, boneless skinless chicken breasts or chicken thighs will work as well.
  • Bell Peppers: You can use a variety of colors of bell peppers. I used a mix of red, orange, and yellow.
  • Onion: Additionally, you will also need one white onion, a yellow onion will work too.
  • Chipotle Peppers: For this chipotle marinate chicken recipe you will need a 7 ounce can of chipotles in adobo sauce.

STEP 1: CREATE THE CHICKEN CHIPOTLE MARINADE

To make the seasoning for chicken kabobs start by adding the adobe sauce, garlic powder, and cumin to a food processor and pulse for about 10 seconds.

STEP 2: CHOP UP THE CHICKEN AND VEGGIES

Cut the chicken into bite size pieces and add to a medium sized bowl along with the rub, mix until evenly coated. Then chop up peppers and onions add to baking sheet and season with salt and black pepper.

STEP 3: MAKE BAKED CHICKEN KABOBS

Add the seasoned chicken cubes to the wooden skewers to make the kabobs. Place the marinated chicken skewers over the peppers and onions on the baking dish. Cook for 15-20 minutes in the oven.

Ingredients

  • 1.5 pounds of chicken tenderloins
  • 16 ounces of mixed peppers, red, yellow and orange
  • ½ small white onion cut up
  • 7 ounces of chipotles in adobo sauce
  • 1 teaspoon of garlic powder
  • ½ teaspoon of cumin
  • 2 teaspoons All Purpose Seasoning Blend
  • Non stick cooking spray
  • 4 wood skewers

Instructions

  • Preheat the oven to 375 degrees. Spray a 9×13 baking dish with non stick cooking spray and set aside.
  • To create the rub add the adobo sauce, garlic powder and cumin to a food processor. Pulse for 10 seconds or until pureed. Pour the sauce into a medium-sized bowl.
  • Cut the chicken into 1.5 inch cubes and place it into the medium-sized bowl. Mix until the chicken is fully coated in sauce.
  • Cut the peppers and onion and place into the prepared baking dish and sprinkle with All Purpose Seasoning blend.
  • Place the chicken on the skewers.
  • Place the prepared skewers in the baking dish resting on top of the peppers and onions.
  • Cook for 15-20 minutes at 375 degrees.
  • Remove from the oven once cooked. The internal temperature should read 165ºF (74ºC).
