1. Prep Oven Baked Chicken
Preheat the oven to 375 degrees. Spray a 9×13 baking dish with non-stick cooking spray and set aside.
2. Marinate the Chicken
To create the rub or marinade add the adobo sauce, garlic powder and cumin to a food processor. Pulse until pureed. Pour the sauce into a medium-sized bowl.
Cut the chicken into 1.5 inch cubes and add chicken into the chicken kabob marinade. After you add the chicken, mix until the pieces of chicken are fully coated in chicken marinade.
3. Cut Veggies
Cut the peppers and onion and place into the prepared baking dish and sprinkle with All Purpose Seasoning blend.
4. Cook Chicken and Veggies
Thread the chicken cubes on the skewers and place in the baking dish on top of the peppers and onions. Cook the chicken kabobs for 15-20 minutes at 375 degrees in the preheat oven. Remove from the oven once cooked.
The internal temperature of the chicken reaches should read 165ºF (74ºC) when raw chicken is done. Enjoy juicy and flavorful chicken!

Ingredients
- 1 ½ pounds Chicken tenderloins
- 16 ounces Mixed peppers, red, yellow and orange
- ½ Small white onion, cut up
- 7 ounces Chipotles in adobo sauce
- 1 teaspoon Garlic powder
- ½ teaspoon Cumin
- 2 teaspoons All Purpose Seasoning Blend
- 4 Wood skewers
Instructions
- Preheat the oven to 375 degrees. Spray a 9×13 baking dish with non stick cooking spray and set aside.
