Prep Ahead Suggestions for Skillet Pork and Pineapple
- Marinade: The marinade can be fully prepared up to 24 hours in advance. Simply whisk all the marinade ingredients together and store them in an airtight container in the refrigerator. When ready to cook, pour the marinade over the pork chops.
- Chopping Ingredients: You can chop the pineapple, onion, and any other vegetables you plan to use (like bell peppers) up to a day ahead and store them in separate airtight containers in the refrigerator.

How to Store, Reheat and Use Leftovers after you Cook Pork
- Storing: Place cooled pineapple pork chops and their sauce in an airtight container within two hours of cooking. They can be safely stored in the refrigerator for 3-4 days at 40°F (4°C) or below
- Reheating: The goal is to reheat gently to prevent the pork from drying out, especially since pork chops can become tough when overcooked.Place the pork chops and sauce in a skillet over medium-low heat. Add a splash of water or chicken broth to create a steamy environment and help loosen the sauce if it has thickened. Cover the skillet and heat gently, flipping the chops occasionally, until they are warmed through to an internal temperature of 165°F (74°C).
- Using Leftovers: Pineapple Pork Stir-Fry: Slice the leftover pork and combine it with additional fresh vegetables (bell peppers, onions, snap peas, carrots) and extra soy sauce or a bit more of the pineapple sauce. Serve over rice. Pork & Pineapple Rice Bowl: Dice the pork and mix it with the sauce, serving it over white or coconut rice. You can add a fried egg, some chopped green onions, or a sprinkle of sesame seeds. Pork & Pineapple Tacos/Wraps: Shred or dice the pork and use it as a filling for tacos or lettuce wraps. Top with a fresh pineapple salsa (if you have extra pineapple) or a dollop of sour cream/yogurt.
Common Questions About Pork Served with Pineapple
These asian pork chops can be grilled for a smoky char, baked for a hands-off approach, pan-seared for a crispy exterior, or even slow-cooked for ultimate tenderness. This adaptability suits different preferences and time constraints.
For fresh cuts of pork like chops, the U.S. Department of Agriculture (USDA) recommends it reach an internal temperature of 145°F (63°C). Use a meat thermometer for tender pork chops that have a slightly pink center.
Remove the pork chops from the heat and let them rest for at least 3 minutes. This “carryover cooking” will allow the temperature to rise a few more degrees and the juices to redistribute, resulting in a juicier, more tender chop.
For longer storage, freeze the cooked pork chops and sauce in a freezer-safe container or heavy-duty freezer bag. They can last for 2-3 months in the freezer.

- Taste and Adjust the Marinade: Before adding the pork, taste the marinade and adjust the sweetness, saltiness, or acidity to your liking.
- Consider Caramelizing the Pineapple: For an extra layer of flavor, grill or pan-sear the pineapple slices separately until they have some nice caramelized edges.
