Ingredient Notes

  • Vegetable oil: Such as olive oil.
  • Chopped Green Chiles
  • Chili Seasoning Mix, Use the link to make your own or try a packet.
  • Chicken Broth: 2-14.5 oz cans. You can use a low sodium chicken broth.
  • Chicken Breast, chopped, about three cups.
  • Cannellini Beans: 3 cans they are the largest of the group and because of their traditional kidney shape, they can also be referred to as White Kidney Beans. Meatier than Navy or Great Northern beans, they have a nutty, earthy flavor and tender flesh.
  • Monterey Jack Cheese:Or any of your favorite cheeses or cheese blends.

How to Make White Chicken Chili Soup

These are the basic steps for making cream cheese chicken chili. Please refer to the recipe card below for more detailed instructions and nutrition information.

STEP 1:Saute

First, heat the oil in dutch oven or large saucepan over medium-low heat.  Slowly cook the chopped medium onion until tender.  Then mix in garlic, green chilies peppers, cumin, oregano and cayenne.

STEP 2: Mix

Continue to cook and stir the mixture until tender, about 3 minutes.  Next, mix in the chicken broth, chicken and beans and then simmer for 15 minutes, stirring occasionally.

STEP 3: Finish

Finally, remove the chili from the heat and stir in cheese and top with cilantro, avocado and/or a squeeze of fresh lime juice.

Ingredients
  

  • 1 Tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 4 oz can chopped green chile peppers
  • 4 teaspoons Chili Seasoning Mix
  • 29 oz chicken broth, 2 cans
  • 3 cups cooked chicken breast, chopped
  • 45 oz cannellini beans, 3 cans
