- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. When done, drain the pasta but reserve 1 cup of pasta water.
- Sear the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with Italian Seasoning, salt and pepper. Add the chicken breast and cook for a couple minutes on both sides, and cook the chicken until done.
- Make the Sauce: Pour the chicken broth into the skillet, and increase the temperature to medium-high. When the broth is simmering, add in the heavy cream and lower heat back to medium. Let simmer until reduced by half.
- Add the Drained Pasta: When the sauce has thickened to a texture you’re happy with, add the cooked pasta, sundried tomatoes and spinach. Stir, then add grated parmesan cheese and lemon juice to taste.

Ingredients
- 2 Tablespoons Oil
- 4 Chicken breasts
- 1 teaspoon Italian seasoning
- 1 teaspoon Minced garlic
- ¼ teaspoon Salt, to taste
- ¼ teaspoon Pepper, to taste
- 1 cup Chicken broth
- 1 cup Heavy whipping cream, 35%
- 1 cup Spinach
- ½ cup Sundried tomatoes, oil drained
- Parmesan cheese, to taste
- 2 Tablespoon Lemon juice
- 10 ounces Pasta, Cooked
Instructions
- Cook Pasta according to package directions. Heat oil in a skillet over medium heat.
- Season the chicken breasts with Italian seasoning, salt and pepper then place in the hot skillet.
- Sear the chicken for 4-5 minutes on one side, then flip and continue to cook for 4-5 more minutes. Add the minced garlic and cook for about 30 seconds.
- Add the chicken broth to the skillet and increase heat to medium-high.
- Once the chicken broth is simmering, add the heavy whipping cream and then reduce heat to medium.
- Allow the liquid to simmer until reduced by half, about 8 minutes.
- Add the cooked pasta, spinach and sundried tomatoes to the skillet until spinach is completely wilted.
- Add the Parmesan cheese to taste, then finish off with the lemon juice.
