- Activate the Yeast: Preheat the oven. In a mixing bowl, combine the warm water, yeast, sugar, dry milk powder and flour. Let sit for about 10 minutes.
- Mix the Dough: Add the thyme, salt, olive oil and flour to the bowl with the yeast mix. Knead with a stand mixer fitted with the dough attachment. Lightly flour your work surface and roll out the dough thin.
- Top the Dough: Mix shredded mozzarella, olive oil and oregano. Brush melted butter over the rolled out dough and top with the mozzarella mixture.
4. Roll the Dough: Roll the dough like you would a cinnamon roll, and slice into 2 inch sections.
5. Brush Egg Wash and Bake: Mix an egg with some water and brush over the tops of the slices. Bake uncovered for 15 minutes, then covered with foil for 10 minutes.

Ingredients
- 2 cups Water, warm
- 2 Tablespoons Yeast
- 4 Tablespoons Granulated sugar
- 3 Tablespoons Dry powdered milk
- 1 Tablespoon Thyme
- 1 ½ teaspoons Salt
- ½ cup Olive oil
- 6 cups All purpose flour, scooped and leveled, divided
Filling
- 3-4 cups Mozzarella cheese, shredded
- 3-4 Tablespoons Olive oil
- 1 Tablespoon Oregano
- 3 Tablespoons Butter, melted
Egg Wash
- 1 Egg
- 1 Tablespoon Water
Instructions
- Preheat the oven to 425℉.
- Combine warm water, yeast, sugar, dried milk, and 2 cups all purpose flour in a mixing bowl.
- Let sit for 10 minutes.
- Add thyme, salt, olive oil, and 4 cups scooped and leveled all purpose flour to the mixing bowl with yeast and knead for 10 minutes with dough attachment.
- Mix shredded mozzarella cheese, 3 tablespoons olive oil and oregano in a bowl.
- Lightly flour surface and roll it thin. Brush the top of the dough with melted butter and cover with mozzarella mixture
- Roll the dough as you would a cinnamon roll and slice the dough in 1.5 to 2 inch sections.
- Mix the egg and 1 tablespoon of water. Brush the dough with the egg with egg wash.
- Bake for 15 minutes uncovered in the preheated oven. Cover with foil and bake for an additional 10 minutes.
