I find that burrito bowls are much easier to eat than burritos, making them my go-to Chipotle order. Bowls don’t fall apart on you while you’re trying to eat them and they’re also easy to throw in the fridge for later!

You will need just a few simple ingredients that you might already have around your kitchen. If you don’t, no worries, they’re all super easy to find at your local store.

  • Chicken Breasts: We’re using cooked, skinless chicken breasts as our protein in this meal. You could also use boneless skinless chicken thighs or use chicken in a can for this easy recipe.
  • Rice: Feel free to use brown rice, white rice, cilantro lime rice recipe or whatever rice you like for rice and chicken.

1. Prep Ingredients

Slice or chop cooked chicken and set aside.

Cook the rice until rice is tender. When the rice is done cooking, mix in a cup of salsa and set aside. The salsa will give the rice in the recipe more flavor.

2. Heat Corn and Beans

Add a tablespoon of olive oil to a skillet over medium heat. Then, add a can of black beans, a can of whole kernel corn and three chopped scallions and cook until heated through.

3. Assemble your Burrito Bowls

Add the rice into bowls, then add chicken. After you add the chicken, add lettuce, beans and corn, and finish with Chipotle Ranch Dressing.

Ingredients
  

  • 2 Boneless skinless chicken breasts, cooked
  • 2 cups Rice
  • 1 tablespoon Olive oil
  • 1 cup Salsa
  • 1 can Whole kernel corn, drained
  • 1 can Black beans, drained and rinsed
  • 2 cloves Garlic, finely mined
  • 3 Scallions, chopped
  • Romaine lettuce, chopped, optional

Instructions
