What Can I Add to a Chicken Fajita Bowl?

The beauty of this fajita bowl recipe is how easy it is to customize with toppings. Guacamole or sliced avocado adds a creamy, rich layer that pairs perfectly with the smoky fajita seasoning. Pico de gallo or fresh salsa brings a bright, fresh contrast to the roasted peppers and chicken.
You can also pile on shredded lettuce, pickled jalapeños, or a squeeze of fresh lime juice for extra zing. Corn — either roasted or straight from a can — is another crowd-pleasing addition that fits right in with the southwest flavors. Basically, anything you’d load onto a burrito works beautifully here.
Pro Tip
Spread the chicken and vegetables in a single, even layer on the sheet pan before baking. Overcrowding the pan causes the ingredients to steam rather than roast, and you’ll miss out on those slightly caramelized edges on the peppers and onions. If your pan feels packed, use two sheet pans instead of one.
Ingredient Notes
You only need a handful of straightforward ingredients to make this chicken fajita bowl — here’s what to know before you shop.
This is an overview of key ingredients. Get the full printable recipe with specific measurements and directions in the recipe card below.

- Chicken Breasts: Thin strips cook faster and more evenly than thick chunks, so take a minute to slice them uniformly.
- Bell Peppers: Using red, orange, and yellow peppers gives you a mix of sweetness and color that makes the bowls look as good as they taste.
- Fajita Seasoning Packet: One 1.25-ounce packet is perfectly calibrated for one pound of chicken — no measuring individual spices needed.
- Black Beans: Drain and rinse them well before adding to the bowls; it removes excess sodium and keeps the flavors clean.
- Shredded Cheese: A Mexican blend or sharp cheddar both work great here — shred it yourself for the best melt.
- Sour Cream: This is listed as a garnish, but don’t skip it — it adds a cool, creamy contrast to the warm roasted chicken and vegetables.
Variations and Substitutions
This recipe is incredibly flexible — here are some easy ways to make it your own.
➡️ Swap the protein: Use shrimp, steak strips, or even tofu in place of chicken for a different chicken bowl experience.
➡️ Switch up the base: Trade the rice for cilantro-lime cauliflower rice, quinoa, or shredded lettuce for a lighter bowl.
➡️ Try a different seasoning: Taco seasoning works as a 1:1 swap if you don’t have fajita seasoning on hand.
➡️ Add more veggies: Zucchini, mushrooms, or corn all roast beautifully alongside the peppers and onion.
➡️ Go dairy-free: Skip the cheese and sour cream, and add a scoop of guacamole instead for creamy richness.
➡️ Turn up the heat: Add sliced jalapeños to the sheet pan before roasting to bring some southwest chicken bowls heat to the whole dish.
Kitchen Tools To Make It Easier
You don’t need anything fancy to pull off this sheet pan dinner — just a few reliable kitchen basics.
- Rimmed Baking Sheet: A rimmed sheet pan keeps all the juices contained while the chicken and vegetables roast.
- Parchment Paper: Lining the pan makes cleanup a breeze and prevents sticking.
- Mixing Bowls: You’ll need a large bowl to toss the chicken and vegetables with the oil and seasoning.
- Knife Set: A sharp chef’s knife makes slicing the chicken and peppers quick and easy.
- Cutting Board: A sturdy cutting board gives you a safe surface for all that slicing.
- Measuring Spoons: Handy for portioning out the olive oil and dividing the rice between bowls.

This fajita bowl recipe comes together in just a few simple steps — here’s the big picture before you get started.
These are just highlights. Get the full printable recipe with specific measurements and directions in the recipe card below.

Prep Ahead and Short Cut Tips
This recipe is already quick, but a few smart shortcuts make it even faster on a weeknight. Here’s how to get ahead:
➡️ Slice the vegetables early: Cut the peppers and onion up to three days ahead and store them in an airtight container in the fridge.
➡️ Pre-cut the chicken: Slice the chicken breasts into strips the night before and refrigerate them in a zip-top bag.
➡️ Cook the rice in advance: Make a big batch of rice at the start of the week so it’s ready to scoop when dinner time comes.
➡️ Use rotisserie chicken: Skip the raw chicken entirely and toss shredded rotisserie chicken with the seasoned vegetables for the last 10 minutes of roasting.
➡️ Buy pre-sliced peppers: Frozen fajita pepper and onion blends work great here — just thaw and pat them dry before tossing with the seasoning.
Alternate Cooking Methods
The sheet pan method is my go-to, but you have a couple of solid options depending on what equipment you have on hand.
- Cook it on the stovetop: Heat a large skillet or cast iron pan over medium-high heat with a drizzle of oil. Cook the seasoned chicken strips first for about five to six minutes, then remove and cook the peppers and onions in the same pan until softened. Combine everything and serve over rice.
- Use an air fryer: Toss the seasoned chicken and vegetables together and cook in a single layer at 400°F for 12 to 15 minutes, shaking the basket halfway through. You may need to work in batches depending on the size of your air fryer.
- Try the grill: Thread the chicken strips and vegetables onto skewers and grill over medium-high heat for 10 to 12 minutes, turning once, until the chicken is cooked through and the vegetables have a nice char.
Can I Make Chicken Fajita Bowls Ahead of Time for Meal Prep?
Absolutely — this chicken fajita bowl recipe is one of my favorite meals to prep on a Sunday for the whole week. The components store separately really well, which makes assembly fast on busy weeknights.
Roast the chicken and vegetables as directed, then let everything cool completely before dividing into containers. Cook a big batch of rice at the same time and portion it out alongside the chicken and veggies. Store the black beans, cheese, and sour cream separately so nothing gets soggy.
When you’re ready to eat, just reheat the rice and chicken mixture and add your toppings fresh. Each bowl comes together in about two minutes, which makes this a genuinely practical meal prep win.

How to Store, Reheat and Use Leftovers
- Storing: Let the chicken and vegetables cool completely, then transfer them to an airtight container and refrigerate for up to four days. Store the rice, beans, and toppings separately to keep everything fresh.
- Reheating: Reheat the chicken, vegetables, and rice in the microwave in 60-second intervals, stirring between each, until warmed through. Add the cheese, sour cream, and any other toppings after reheating.
- Using Leftovers: Leftover chicken and peppers are incredibly versatile. Wrap them in a tortilla for quick Chicken Tacos or Chicken Quesadillas, or toss them over a fresh bed of rice for a Chicken Burrito Bowl. You can also chop the chicken finer and use it as a topping for a Mexican Chicken salad or stir it into a Chicken and Rice casserole.
Expert Tips for Making This Recipe
➡️ Spread it out: Make sure the chicken and vegetables are in a single layer on the sheet pan so they roast instead of steam.
➡️ Check the temp: Use an instant-read thermometer to confirm the chicken hits 165°F — it’s the most reliable way to know it’s done.
➡️ Pat the chicken dry: Blotting the chicken strips with a paper towel before seasoning helps the coating stick and gives you better browning.
➡️ Warm the beans: Heat the black beans in a small saucepan or microwave before adding them to the bowls so every component is hot at serving time.
