Ingredients
  

  • 1 pound Roma tomatoes, seeded and finely chopped
  • 1 Red onion, finely diced
  • ½ cup Red bell pepper, diced
  • ½ cup Green bell pepper, diced
  • 11 ounces Corn, drained
  • 15 ounces Black beans, drained
  • 15 ounces Black eyed peas, drained
  • 1 cup Cilantro, finely minced

Vinaigrette

  • ½ cup Olive oil
