I love trifles.  It’s probably because I’m the world’s worst cake cutter and server.  Or, maybe it’s all of the pretty layers. My mom made this amazing strawberry trifle for my sister’s Memorial Day party. And, since I’m on a strawberry kick this week, I thought I would share her recipe with you.

There is just something about a dessert that isn’t fussy.  Trifles are the antithesis (good word, huh?!) of fussy.  You can’t really mess up when you make them.  And, you definitely can’t mess them up when serving them.  That’s my kind of dessert.

I discovered this recipe by accident.  I was having some guests over and realized that I completely forgot to plan a dessert.  Duh!  I found a few recipes online for mug cakes and took my favorite parts of each one to come up with this recipe.  As my friends started arriving, I was whipping this easy chocolate cake together.  It was ready in no time!

This bread is really more of a cake.  It has the consistency of a pound cake but with all of the added flavor a quick bread.   Plus it’s bursting with the bright, happy flavors of lemon and blueberry!

I have a confession to make.  I have a love affair with anything lemon.  Cakes, pies, drinks, you name it.   I came across this recipe for Lemon Pull Apart Bread on Pinterest.  Of course, I knew I had to try it.

The recipe has only 5 ingredients and only a few simple steps.  It also uses frozen bread dough which is perfect for me since I’m not much of a bread baker.  Frankly, yeast kind of scares me.

I made this recipe over the weekend and it was delicious!  It was a nice light dessert and it was even great for breakfast the next morning.  I loved the bright, tart flavor.  I think this will be perfect for Easter or Mother’s Day brunch!

In December, my grandfather passed away.  He lived 92 very full years and was surrounded by family and good friends.   I’m so grateful that my son had the opportunity to spend so much quality time with him.  I know that he has many fond memories of his Pop Pop, as do I.

Now, If you’ve read my About page, you’ll know that I’m self proclaimed recipe hoarder.  Somehow, someway I end up walking away from every gathering, trip to the grocery store, dentist or salon with recipes.  Sometimes they are scribbled on the backs of envelopes, on paper plates or in my check book.  Sometimes, they aren’t even recipes – just a list of ingredients.  And, if I’m lucky, I even score bona fide recipe cards – complete with a recipe!

You’re probably wondering where I’m going with all of this.  Well, my grandfather’s wake was no different from most other functions I’m at.  Here I was, standing between my mother and my sister in the receiving line (I’m not even sure if that’s what you call it at a wake), when one of my parent’s friends comes through.  And, wouldn’t you know it…he hands me a recipe card with his wife’s Rum Cake recipe!

This was the night that our Elf on the Shelf, Charlie, made his official appearance! He appeared on the roof of the car as we went to leave.  My 6 year old and his friends were ecstatic and ran screaming through the neighborhood!

We all got together with intentions of watching the Elf on the Shelf movie, but the kids had such a fun time playing with each other, we never got to watch the movie.  They also made a super cute hand-print snowman ornament.  Sadly, my son was so excited about Charlie that he tripped and smashed his ornament, so I don’t have the finished product to show you.

There were  also all kinds of fun treats, complete with a bag of Elf Food (a.k.a. Peppermint Chex Mix) for the kids to feed their elves. Try these fun cookies too. My Mint Chocolate Chip Cookies/

I literally dropped everything, threw my son in the car (well not really threw, but quickly ushered him) and headed to the grocery store to pick up the ingredients I didn’t already have.

Once I got home I was able to whip this pie up in no time flat! And, it’s a good thing. Because I had a peanut gallery that was drooling over my shoulder!

Caramel? Shortbread? And, put it all together and you’ve got one super, duper yummy cookie! Every year, when the neighborhood girls camp out in front of the grocery store, I have to buy a box. And then…I hide it! I want them all to myself! And, I know it sounds silly, but I ration them. I want to extend the bliss as long as possible.

Happy Easter!   Today was a whirl wind day!  We’ve been on the go since 9 am — enjoy not one, but TWO holiday dinners!  One at my parent’s house and one at my sister-in-law Cathy’s.  There were so many uber delicious things.  I love holidays!

One thing in particular that caught my eye (or should I say tickled my taste buds?) was this great caramel apple dip that Cathy made.  I’m going to apologize right now for the poor quality of the photos here….it’s the best that my cell phone could provide!

I thought it would be fun to host a cookbook review on It’s a Keeper (IAK).  Some of my readers and Facebook/Twitter followers who wanted to participate don’t have blogs of their own to share their recipes on, so I offered up a guest post on IAK to give all of my readers the opportunity to share their reviews.  This one is from my good friend, Natalie.

When looking for a recipe or two to review for the It’s A Keeper Cookbook Review, I came across Ina Garten’s Roasted Pears with Blue Cheese.  One of my very favorite salads, especially in the fall when the pears and apples are at their peak, is one with pears, walnuts, and cranberries, so when I saw this recipe, I knew I had to try it.
